This is a combination of different recipes I have tried over the past couple of years, keeping the elements I like the most. Everyone asks for the recipe so here it is! I like a spicy sauce. It's not too hot, but not sweet like most sauces out there. I'm still playing around with it, but I like how its going so far! ** update ** I have decided that perhaps pureeing the onions and garlic might be beneficial because most barbecue sauces don't have chunks of onion and garlic! I will work to change test and change this soon (3/2/10)

1 tablespoon vegetable oil
1/2 cup onion, minced
1 1/2 tablespoons garlic, minced
1/4 cup apple cider vinegar
1 1/2 cups ketchup
1/2 cup brown sugar
1 tablespoon dried mustard
1/2 tablespoon chili powder
1 teaspoon salt
1 teaspoon cumin
1/2 tablespoon cayenne pepper (to taste)
1 1/2 tablespoons hot sauce
1 teaspoon liquid smoke
2 teaspoons garlic powder
1 tablespoon honey
1/4 teaspoon black pepper

Steps:

  • Heat vegetable oil in a medium saucepan over medium heat. Add garlic and onions and cook, stirring, until softened.
  • Add the vinegar to the pan and cook for an additional 2 minutes.
  • Place everything else in the pan stir and bring to a simmer. Cook for at least 30 minutes, or until thick.
  • You may use it right away or cool it and refrigerate for later use.

This is my absolute go to sauce for barbecuing. Where would be all be without a good bbq sauce? Well, don't find out. Instead of reaching for the bottle next time you are standing at the grill, make this instead. Never disappoints and is great on chicken pork and beef.

1 Cup ketchup
1 Tablespoon white wine vinegar
1 Tablespoon Dijon mustard
1 Tablespoon brown sugar
1 Tablespoon Worcestershire sauce
2 Garlic cloves (crushed)
1/2 Onion (finely chopped)
1 Small dried chili (finely chopped)
Salt
Pepper

Steps:

  • In a small saucepan set over medium heat, add all the ingredients. Stir well. Simmer for 30 minutes, stirring occasionally. Remove from heat and leave to cool. Will keep in a glass jar in the fridge for a few weeks.

This is a recipe for spicy barbeque sauce. I let meat set overnight in the sauce. It makes a great marinade sauce. Its really spicy so if you don't like it so spicy leave out the pepper flakes. This also helps as a meat tenderizer. Enjoy!

I have made this for years, with a little tweak here and there and finally think I have it perfected. It has just enough bite from the vinegar, but a subtle sweetness too. I make quadruple batches and store it in old mayo jars in my garage fridge for quick meals. The longer you simmer it, the better it gets!

2 tablespoons butter
1 cup onion, chopped
2 1/2 teaspoons salt
6 garlic cloves, minced
1/2 cup maple syrup
1/4 cup molasses
1 cup vinegar
1 1/2 cups catsup
2 1/2 cups chicken stock
3 beef bouillon cubes
1 1/2 tablespoons Worcestershire sauce
1 teaspoon liquid smoke
1/4 teaspoon black pepper
Tabasco sauce

Steps:

  • Melt butter in a large stewpot over med-high heat.
  • When the bubbling subsides add the onions all at once.
  • Sprinkle with the salt and cook for 5-8 minutes, stirring often, until golden.
  • Add the garlic and cook for another minute until fragrant.
  • Add the syrup, molasses, vinegar and catsup. (At this point I use a hand blender to puree the onions, but this is optional).
  • Bring to a boil, then reduce the heat to med-low.
  • Add the remaining ingredients and continue to simmer until thick and bubbly, at least 30 minutes. The longer you simmer it, the better it will be.
