PUTTANESCA OR KALAMATA KWIK SAUCE

Puttanesca or Kalamata Kwik Sauce image

This is a great quick pasta sauce, full of flavor. Ladle onto short pasta with a generous spoonful of Pecorino Romano cheese. This is not intended to be a sauce that you smother the pasta in. If the fresh tomatoes aren't garden fresh and full of flavor I would consider omitting them from the recipe.

Tips:

  • Use high-quality Kalamata olives for the best flavor. Look for plump, dark purple olives with no blemishes.
  • If you don't have breadsticks, you can use refrigerated pizza dough or puff pastry dough instead. Just roll it out into a long, thin rectangle and cut it into strips.
  • Be careful not to overproof the breadsticks. They should be slightly puffy but not doubled in size.
  • If you don't have marinara sauce, you can use your favorite dipping sauce instead. Ranch dressing, blue cheese dressing, or even honey mustard would all be great options.
  • These breadsticks are best served warm. If you're making them ahead of time, you can reheat them in the oven or microwave before serving.
