1 whole Cauliflower
2 cups Mozzarella (shredded)
1/2 cup Cheddar (Aged Tasty)
1 cup Sour Cream
7 oz Bacon
1/2 medium Onion (sliced)
1 tbsp Italian Herb Mix
2 tsp Garlic Powder

Steps:

  • Preheat the oven to 180C/355F.
  • Break the cauliflower up into florets and blanch for 5 minutes (boil then quickly run under cold water) and drain well.
  • Add the cauliflower to a baking dish.
  • Add the sour cream and coat the cauliflower with it evenly.
  • Add half of the mozzarella and mix well.
  • Cut the bacon into strips and add on top, followed by the onion, herbs and garlic powder.
  • Add the rest of the mozzarella followed by the grated cheddar.
  • Bake for 25 minutes until golden.
  • Remove from the oven and serve hot!

1 lb Cauliflower Florets (frozen is easiest because it's already cut.)
2 oz cream cheese (softened)
2 tbsp Butter
1/2 tsp Kosher Salt
1/4 tsp Black Pepper
1/2 tsp Garlic Powder
4 slices Bacon (cooked crispy and chopped)
3 oz Smoked Gouda Cheese (shredded)

Steps:

  • Place the cauliflower in a microwave safe dish with a lid on high for 8 minutes, or until soft. Remove from microwave and take off the lid to let steam escape. You want the cauliflower to dry out a bit. See the post for tips.
  • Transfer the cauliflower and all ingredients except bacon and cheese in a food processor or blender. Pulse until smooth and salt and pepper to taste if you need to. Add almond milk or heavy cream one tbsp at a time if you need more moisture to get it smooth.

2 tablespoons medium-chain triglyceride (MCT) oil
½ tablespoon apple cider vinegar
sea salt to taste

Steps:

  • Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, 5 to 10 minutes. Drain on paper towels, reserving grease in the skillet.

4 cups water
1 large head cauliflower
2 teaspoons kosher salt, divided
4 oz cream cheese
⅓ cup heavy cream
¼ teaspoon cayenne pepper
1 teaspoon paprika
2 cups shredded cheddar cheese
fresh parsley, finely chopped, for garnish

Steps:

  • In a large pan over medium-high heat, cook the bacon for 6 minutes, or until crisp. Remove the bacon from the pan, pat off excess grease with a paper towel, then chop and set aside.
