LOW CARB CRAB BISQUE

Low Carb Crab Bisque image

Easy peasy. Twenty minutes. Delicious. We make it with the 1-lb can of crab claw meat which is terrific (Trader Joe's, Lucky Market in the refrigerated seafood section) and runs about $9.)

Time 20m

Yield 6 , 6 serving(s)

Number Of Ingredients 10

1 lb canned crabmeat (or fresh, if you have it, can afford it!)
1 (14 1/2 ounce) can crushed tomatoes
8 ounces low-fat cream cheese
1 tablespoon butter
2 stalks celery, chopped
1 large onion, chopped
1/2 red bell pepper, chopped
2 cups chicken stock or 2 cups seafood stock
1 cup white wine
1 1/2 teaspoons Old Bay Seasoning

Steps:

  • Saute the chopped vegetables in the butter and Old Bay Seasoning.
  • Add the stock, wine and tomatoes and simmer until vegetables are soft. Use less stock if you like a thicker bisque - one reviewer mentioned this was a little thin for her taste: no problem withholding, then adding some of the stock at the end until you get it the way you like it!
  • Melt the cream cheese into the stock/vegetable mixture.
  • Add the crab, heat and serve.
  • Note: I use Redi-Base seafood stock base, available on line.

CRABMEAT BISQUE MADE EASY

Crabmeat Bisque Made Easy image

This is not a thick soup, yet it is creamy and so smooth to the palette. The aroma when cooking makes you want some before the potatoes are soft. I have made modifications due to allergy to corn (such as rice flour). I allow mine to slow-simmer with lid slightly ajar. Stir often so the film does not form on top. I have doubled my batch and still never have any for the freezer.

DECADENT AND EASY CRAB BISQUE

Decadent and Easy Crab Bisque image

This is an easy and quick recipe that my sister and I devloped. It's definitely not in the low fat category but it sure is satisfying!

Provided by LifeIsGood

Categories     Crab

Time 30m

Yield 6-8 serving(s)

Number Of Ingredients 9

1 small onion, chopped
1/4 cup unsalted butter
4 tablespoons flour, divided
4 cups half-and-half, divided
1 cup heavy cream
2 teaspoons salt
pepper
1 lb crabmeat (don't skimp here..a good, canned variety comes from Phillips)
chives, chopped (optional)

Steps:

  • Saute onion in the butter, over medium heat, until translucent.
  • Add 2 T. of the flour to the onions, mixing well with a wooden spoon. Cook for about a minute.
  • Add 3 cups of the half-and-half, heavy cream, salt and pepper. Whisk while bringing up to a boil (you can turn up the heat a bit here - just be careful not to scald the cream).
  • Shake 2 T. of the flour and 1 cup of the half-and-half - using a jar with a lid. Shake until the flour is blended well.
  • Add to the soup by whisking. Keep whisking until the soup thickens.
  • Stir in the crab and cook for about 5 more minutes.
  • Ladle the soup into the bowls and garnish with snipped chives, if desired.

Tips:

  • Use fresh crab meat: Fresh crab meat will give your bisque a more delicate flavor and texture. If you can't find fresh crab meat, frozen crab meat will also work.
  • Don't overcook the crab meat: Crab meat cooks quickly, so be careful not to overcook it. Overcooked crab meat will become tough and rubbery.
  • Use a good quality seafood stock: A good quality seafood stock will add a lot of flavor to your bisque. If you don't have seafood stock on hand, you can make your own by simmering seafood bones and vegetables in water.
  • Add vegetables to your bisque: Vegetables will add flavor and texture to your bisque. Some good vegetables to add include onions, celery, carrots, and leeks.
  • Season your bisque to taste: Season your bisque with salt, pepper, and other spices to taste. You can also add a bit of lemon juice or white wine to brighten the flavor.
  • Serve your bisque with a garnish: A garnish will add a touch of elegance to your bisque. Some good garnishes include chopped parsley, chives, or tarragon.

Conclusion:

Crab meat bisque is a delicious and elegant soup that is perfect for a special occasion. It is also a relatively easy soup to make, so it is a good choice for beginner cooks. With a few simple tips, you can make a crab meat bisque that will impress your friends and family.
