Kettle corn, also known as carnival corn or caramel corn, is a sweet and crunchy snack made from popcorn that is coated in sugar and oil. It is a popular treat at fairs, carnivals, and movie theaters, and it can also be made at home. Kettle corn is a relatively simple snack to make, but there are a few key things to keep in mind in order to get the perfect batch. First, you will need to choose the right type of popcorn. Not all popcorn is created equal, and some varieties are better suited for making kettle corn than others. Second, you will need to use the right amount of sugar and oil. Too much sugar will make the kettle corn too sweet, and too little oil will make it dry and hard. Finally, you will need to cook the kettle corn over the right heat. If the heat is too high, the kettle corn will burn. If the heat is too low, the kettle corn will not pop properly.

Here are our top 20 tried and tested recipes!

SPICED KETTLE CORN

Spiced Kettle Corn image

Provided by Melissa d'Arabian : Food Network

Time 10m

Yield between 8 to 12 cups

Number Of Ingredients 7

2 tablespoons vegetable oil
2 tablespoons butter
1/2 cup popcorn kernels (unpopped)
3 tablespoons sugar
1 teaspoon fine salt
1 teaspoon ground cinnamon
1/2 teaspoon cayenne

Steps:

  • Have a hot pad or kitchen towel and a paper grocery bag or large baking sheet handy. Heat the vegetable oil in a large heavy-bottomed Dutch oven or pan over medium heat. Place a couple of kernels of popcorn in the pan. When the kernels pop, proceed to the next step.
  • Once the oil is hot enough, add the butter and stir quickly into the oil to prevent burning. Immediately add the popcorn and stir (the butter may not be completely melted). Add the sugar right away and stir again. Cover the pan, and start shaking it gently back and forth on the burner, using a hot pad or kitchen towel to protect your hands. Keep shaking as the popcorn pops.
  • Once you start hearing 1 or 2 seconds of quiet between the pops, turn the heat off immediately. This means the popcorn is mostly popped. (Be careful not to overcook, as the popcorn can easily burn.) Pour the popcorn into the paper bag or onto the baking sheet and sprinkle with salt, cinnamon, and cayenne. Allow to cool a few minutes before placing in a bowl. (Careful, the hot sugar makes the popcorn extremely hot!)

SWEET AND SPICY KETTLE CORN

Sweet and Spicy Kettle Corn image

We love Kettle Corn.. and well, we love spicy! (not my pic, found at foodiewithfamily)

Provided by Staci Ojeda

Categories     Popcorn

Number Of Ingredients 5

3 Tbsp canola or vegetable oil
1/2 c popcorn kernels
3 Tbsp granulated sugar (i use more)
2 Tbsp ancho chili powder (i use more)
2 tsp kosher salt (i use sea salt instead)

Steps:

  • 1. Heat the oil in the bottom of a heavy 4 qt pan over medium heat until warm, about 1 minute. Add popcorn in a single layer; sprinkle with sugar. Cover pan.
  • 2. Let kernels cook, shaking occasionally to prevent burning. When popping slows to 3-5 seconds between pops, remove pan from burner and pour into bowl. Sprinkle the chili powder/salt mixture onto the popcorn, shaking popcorn to evenly distribute the salt/chili powder mixture. Serve immediately.
  • 3. I don't actually measure my ingredients for doing this. The measurements are an estimation only. I usually just mix up some salt and chili powder and keep it in a lidded bowl and "eyeball" the oil and sugar. The popcorn measurement is the only thing that is an exact amount because it makes the amount of popcorn I want when I do this.

NOT-TOO-SWEET WOK-POPPED COCONUT KETTLE CORN

Not-Too-Sweet Wok-Popped Coconut Kettle Corn image

I'm usually not a big fan of sweet kettle corn, but I wanted to make a moderately sweet version because some people love it and it is nice to be able to offer a sweet snack for the holidays. I realized after testing this recipe that I do like kettle corn if it isn't too sweet. The trick to not burning the sugar when you make kettle corn is to add the sugar off the heat at the end of popping. The wok will be hot enough to caramelize it.

Provided by Martha Rose Shulman

Categories     easy, quick, appetizer

Time 5m

Yield About 12 cups popcorn

Number Of Ingredients 4

2 tablespoons coconut oil
6 tablespoons popcorn
2 tablespoons raw brown sugar
Kosher salt to taste

Steps:

  • Place the coconut oil in a 14-inch lidded wok over medium heat. When the coconut oil melts add a few kernels of popcorn and cover. When you hear a kernel pop, quickly lift the lid and pour in all of the popcorn. Cover, turn the heat to medium-low, and cook, shaking the wok constantly, until you no longer hear the kernels popping against the lid. Turn off the heat, uncover and add the sugar and salt. Cover again and shake the wok vigorously for 30 seconds to a minute. Transfer the popcorn to a bowl, and if there is any caramelized sugar on the bottom of the wok scrape it out. Stir or toss the popcorn to distribute the caramelized bits throughout, and serve.

JOE'S CORN O' THE KETTLE

Joe's Corn O' the Kettle image

A homemade version of Kettle Corn. Popcorn made the old fashioned way-in an castiron skillet. Let's make Joe proud!

Provided by COOKGIRl

Categories     Lunch/Snacks

Time 10m

Yield 5-6 cups

Number Of Ingredients 5

1/3 cup popcorn (or enough to cover bottom of pan in single layer)
oil (for frying)
1/3 cup granulated sugar (I use unbleached sugar)
1/4 cup real butter
salt

Steps:

  • In 10" castiron skillet on medium heat, pour enough oil to.
  • a depth of 1/8". Heat until hot, but not smoking.
  • Place one corn kernel in pan. If it starts to sizzle, then the
  • popcorn kernels are ready to be placed in the skillet.
  • Pour kernels, sugar and butter into skillet, stir then carefully move skillet back and forth over burner to distribute popcorn kernels and to avoid burning.
  • Eventually, (usually about 5 minutes), the kernels will begin to pop. Cover and keep cooking and moving skillet back and forth. From time to time use a fork to stir the popcorn/sugar mixture. The last minute of cooking, increase heat to medium-high. Take skillet off heat promptly when the majority of kernels have popped. Remove skillet lid carefully.
  • Place popped corn in a serving bowl. Set the old maids aside for me. Season with salt. Stir well.
  • Serve.

Provided by Regina Marcial

Categories     Popcorn

Time 15m

Number Of Ingredients 5

2 pkg 3 oz each microwave popcorn
4 Tbsp butter
3 Tbsp water
3/4 c sugar
1 1/2 tsp ground cayenne pepper

Steps:

  • 1. Prepare popcorn according to package directions. Pour popcorn into a large bowl allowing plenty of room for tossing popcorn with sugar and spice mix.
  • 2. In a small saucepan over medium heat, melt butter. Add sugar and water, bring to a boil and cook for 3-4 minutes. Stir in ground cayenne pepper.

Tips:

  • Choose the right popcorn: Use non-GMO popcorn kernels for the best results.

  • Add the popcorn kernels and sugar: Stir to coat the kernels in the sugar.
  • Cover the pot and shake it occasionally: This will help the popcorn to pop evenly.
