Yield Makes 32 rolls

Number Of Ingredients 9

1/4 cup warm water (100 degrees to 110 degrees)
1 package active dry yeast
3 tablespoons sugar, plus a pinch
10 tablespoons unsalted butter, melted and cooled, plus more for bowl and baking pan
1 cup milk, room temperature
1 tablespoon salt
3 large eggs, lightly beaten
4 to 5 cups all-purpose flour, plus more for dusting
Nonstick cooking spray

Steps:

  • In the detached bowl of an electric mixer, whisk together water, yeast, and a pinch of sugar. Set aside until mixture is foamy, 5 to 10 minutes.
  • Attach bowl to mixer fitted with the dough-hook attachment. On low speed, add 7 tablespoons melted butter, milk, salt, remaining 3 tablespoons sugar, and eggs. Slowly add enough flour to make a sticky dough. Increase the speed to medium-high and knead until dough is smooth but still sticky, about 5 minutes. Turn dough out onto a lightly floured work surface and knead dough a few times. Brush the inside of a bowl with butter. Place dough in bowl; cover bowl with plastic wrap sprayed with nonstick cooking spray. Set aside in a warm place until doubled in size, about 2 hours.
  • Generously brush a 9-by-13-inch baking pan with butter. Turn dough out onto a floured work surface. Roll into a 12-by-16-inch rectangle. Using a pizza wheel or a sharp knife, cut dough lengthwise into 4 equal strips. Cut dough crosswise into 8 equal sections. You will have 32 rectangles. Brush dough generously with remaining 3 tablespoons melted butter. Fold each rectangle in half, and place in prepared baking pan, overlapping slightly, 8 across, and 4 down. Brush tops with remaining 3 tablespoons melted butter. Cover pan with buttered plastic wrap. Set aside to rise until dough does not spring back when pressed with a finger, 25 to 30 minutes.
  • Heat oven to 350 degrees. Bake until golden, 35 to 40 minutes. Cool for at least 5 minutes before turning out of pan.

Time 2h50m

Yield Makes 24

Number Of Ingredients 7

1 1/2 cups whole milk, warmed (100 to 110 degrees)
2 1/4 teaspoon active dry yeast, from one packet
4 cups all-purpose flour, spooned and leveled
5 tablespoons unsalted butter, cut into pieces, plus 4 tablespoons, melted
2 1/4 teaspoons coarse salt, plus more for spinkling
1 1/2 teaspoons sugar
Nonstick cooking spray

Steps:

  • In the bowl of a stand mixer, combine milk and yeast and let stand for 5 minutes. Add flour, 2 1/2 teaspoons salt, 5 tablespoons butter pieces, and sugar. With dough hook, mix on low until mixture just comes together. Increase to medium-high; beat until butter is incorporated and dough is soft, 10 minutes.
  • Lightly coat a large bowl with cooking spray. Form dough into a ball, place in bowl, and cover with a damp clean dish towel. Set aside in a warm, draft-free place and let rise until dough doubles in size, 1 to 2 hours (or refrigerate overnight; bring to room temperature before baking).
  • Lightly coat a 9-by-13-inch rimmed baking pan with cooking spray. Turn dough out onto a work surface and loosely cover with damp towel so it doesn't dry out. With a sharp knife, divide dough into 24 pieces, roll into smooth balls (about 2 inches each), and arrange in pan, 1/2 inch apart. Cover with towel and let rise until rolls begin to touch, 1 to 2 hours.
  • Preheat oven to 350 degrees. Brush rolls with half the melted butter; bake until golden brown, 30 minutes. Brush with remaining melted butter, sprinkle with salt, and serve warm.

PULL-APART PARKER HOUSE ROLLS

Pull-Apart Parker House Rolls image

Provided by Jeff Mauro, host of Sandwich King

Categories     side-dish

Time 3h

Yield 12 rolls

Number Of Ingredients 10

3 tablespoons bread flour
1/2 cup cold milk
1 large egg
2 cups bread flour, plus more for flouring
1 1/2 teaspoons instant yeast
2 tablespoons sugar
1 teaspoon kosher salt
7 tablespoons unsalted butter, melted, plus more for the skillet
Nonstick cooking spray, for the bowl
4 ounces garlic-herb butter or honey butter, store-bought or homemade

Steps:

  • For the flour paste: Add 1/2 cup water to a small saucepan set over medium-low heat. Add the flour and cook, whisking constantly, until the mixture is a smooth pudding-like consistency, 30 to 45 seconds. Let cool.
  • For the dough: Add the milk and egg to the flour paste and whisk together until smooth. Transfer the paste to a stand mixer fitted with a dough hook and add the flour and yeast. Mix on low speed until all the flour is moistened, 1 to 2 minutes. Let rest in the bowl for 15 minutes.
  • After 15 minutes, with the mixer running on medium-low speed, add the sugar and salt and mix for about 5 minutes. Add 4 tablespoons of the butter and mix, scraping down the sides of the bowl when necessary, about 5 minutes longer. Transfer the dough to a lightly floured surface and knead briefly to form a ball. Spray a mixing bowl with cooking spray, add the dough ball, cover with plastic wrap and let rest until doubled in size, about 1 hour.
  • Transfer the dough to a work surface and press gently but firmly to release the air. Stretch the dough to form a 9-by-10-inch rectangle. Cut the dough lengthwise into 4 equal strips, then cut those strips into 3 equal pieces. Working with one piece at a time, stretch and press each one into an 8-by-2-inch inch strip. Roll each strip small end to small end in order to form a snug roll.
  • Grease a 12-inch cast-iron skillet with butter and arrange the rolls in the skillet, 10 around the outside and 2 in the middle. Cover with plastic and let rise until doubled in size, about 45 minutes.
  • Position an oven rack in the lowest position and preheat the oven to 375 degrees F.
  • Brush the rolls with the remaining 3 tablespoons butter and bake until golden brown, about 25 minutes. Let cool 5 minutes.
  • When ready to serve, using a 2-ounce ice cream scoop, place scoops of the garlic-herb or honey butter in the center of the bread and let your guests pull apart the bread from the skillet.

Steps:

  • Weigh out the flour, sugar and salt.
  • Add the sachet of yeast and mix together.
  • Measure out the milk and water, ensuring the mixture is tepid.
  • Beat the egg, and then mix together with the water and milk.
  • Make a dough according to your bread making machine's instructions.
  • Turn the dough out onto a lightly floured surface and roll out to about 1cm thick.
  • Using a 8cm cutter, cut circles of dough out, re-kneading and rolling the mix out until you have as many as you can make from the dough.
  • Brush one side of each disk with melted butter and fold in half, arranging the rolls in rows on a non stick baking sheet.
  • Place into the pre-heated oven (200C / fan 180C / gas 6) for 10 - 15 minutes until the rolls are golden and sound hollow when tapped. Best served warm.

Tips:

  • Use fresh ingredients. This will make a big difference in the taste of your rolls.
  • Make sure your butter is cold. This will help to create flaky layers in your rolls.
  • Don't overwork the dough. Overworking the dough will make the rolls tough.
  • Let the dough rise in a warm place. This will help the rolls to double in size.
  • Bake the rolls in a preheated oven. This will help them to rise evenly.
  • Brush the rolls with melted butter before baking. This will give them a golden brown color and a crispy crust.

Conclusion:

Parker House Rolls are a delicious and versatile bread that can be served with a variety of dishes. They are perfect for breakfast, lunch, or dinner. With a little planning and effort, you can easily make these rolls at home. So next time you're looking for a special bread to serve, give Parker House Rolls a try. You won't be disappointed!
