I was inspired by watching chopped the other night and watching one of the contestants take french fries, toss them with a little oil and paprika so I decided to try that with friends for our bimonthly potluck. they turned out great and were actually the hit of the party. one woman went back for four servings of them. so simple, yet so good -- thanks chopped for the inspiration :)

FRESH CUT FRENCH FRIES WITH CREAMY KETCHUP

Time 30m

Yield 4 servings

Number Of Ingredients 4

4 russet potatoes, rinsed, peeled, and cut into 1/4-inch thick sticks
1 1/2 cups canola oil
Salt
1/4 cup creamy ketchup (reserved from Fast Food Cheese Burgers recipe)

Steps:

  • Preheat oven to 200 degrees F.
  • Rinse potatoes under hot tap water and drain well. Dry the potatoes between several sheets of paper towels.
  • In a 12-inch skillet over medium heat, add the oil and heat to 360 degrees F. Add the potatoes and fry until golden brown and crisp. Drain the fries on a baking sheet lined with a paper grocery bag or paper towels and sprinkle with salt, to taste. Keep the fries warm in oven until ready to serve. Transfer the potatoes to a serving bowl and serve with Creamy Ketchup Dipping Sauce

Tips:

  • Choose the right potatoes: Yukon Gold or Russet potatoes are great choices for fries because they have a high starch content, which makes them crispy on the outside and fluffy on the inside.
  • Cut the potatoes evenly: This will help them cook evenly. Use a sharp knife to cut the potatoes into 1/2-inch thick strips.
  • Soak the potatoes in water: This will help remove excess starch, which can make the fries gummy.
  • Dry the potatoes thoroughly: This will help them crisp up in the oil.
  • Use a high-quality oil: Use an oil with a high smoke point, such as canola oil or vegetable oil. Do not use olive oil, as it has a low smoke point and will burn.
  • Heat the oil to the right temperature: The ideal temperature for frying fries is between 350-375°F (177-190°C). If the oil is too hot, the fries will burn. If the oil is too cold, the fries will be soggy.
  • Fry the potatoes in batches: Do not overcrowd the pan, or the fries will not cook evenly. Fry the potatoes in batches, and remove them from the oil when they are golden brown.
  • Drain the fries on paper towels: This will help remove excess oil.
  • Season the fries immediately: While the fries are still hot, season them with salt, pepper, and any other desired seasonings.
  • Serve the fries hot: Fries are best served immediately after they are cooked. You can also reheat them in the oven or air fryer.
