1 medium (4.5 oz, 130 g) onion
1 (7 oz, 200 g) red bell pepper
1 (7 oz, 200 g) yellow bell pepper
5 mushrooms finely sliced
9 oz (250 g) kiełbasa sausage
1 tbsp sesame oil
0.5 cup frozen peas and carrots
2 eggs, lightly beaten
1.5 cups (375 g) cooked rice
2 tbsp soy sauce
2 tbsp chopped green onions (optional)

Steps:

  • Peel a medium onion (white, yellow, red - up to you) and chop it finely. Set aside.
  • Deseed 2 bell peppers and slice them up. Do the same with mushrooms. Set aside.
  • Slice the sausage into rounds, roughly 0.5 inch (around 1 cm) thick.
  • Preheat a large frying pan (or wok if you have one) to medium heat. Cover the bottom of the pan with a solid tablespoon of sesame oil. Move the skillet around to distribute the oil more evenly.
  • Drop in chopped onion and peas and carrots and fry stirring occasionally.
  • As the onion turns translucent, add in kiełbasa rounds and chopped mushrooms. Add in chopped bell peppers. Stir and fry for 2-3 minutes.
  • Slide the veggies & sausage to the side, pour in the beaten eggs onto the other side. Scramble them using a spatula. Once almost cooked, mix the eggs with the rest of the skillet's contents using a spatula.
  • Add in the pre-cooked rice. Pour two tablespoons of soy sauce over it. Stir and fry the mixture until heated through and combined.

4 Tablespoons Sesame Oil
1 small onion, diced
1 clove garlic, minced
1 cup carrots, diced
1 cup frozen peas
2 eggs
1/4 cup Reduced Sodium Soy Sauce
Tops of 3 green onions, sliced

Steps:

  • In a large skillet heat Sesame oil, add garlic, sliced sausage, onion and carrots. Sauté for about 5 minutes.
  • Add in peas. Stir, continue to cook until sausage is browned and the veggies are the desired tenderness. About 5 minutes.
  • Push the mixture to one side of your skillet and in the other, add a little sesame oil, scramble your eggs. Mix it all together.

1 large onion, diced

Steps:

  • Heat oil in a large skillet over medium-high heat. Stir in onions; cook until soft and translucent. Stir in carrots, cabbage, and garlic; cook until garlic begins to brown. Stir in kielbasa; cook until heated through, about 3 minutes. Crumble rice with hands to break up clumps. Then stir rice into skillet. Heat through, then stir in soy sauce. 3 tablespoons Neutral Oil
2 tablespoons Sesame seeds

Steps:

  • Steam rice.
  • Slice kielbasa into coins 1/4" thick.
  • Thinly slice scallions on bias, so cross-section is a little bit wider than it would be if you sliced them directly across the trunk.
  • Thinly slice garlic.
  • Toast sesame seeds (if necessary).
  • Heat a couple glugs of neutral oil in a large nonstick skillet over medium-high heat.
  • Dump kielbasa in pan and let cook, undisturbed, for about 3 minutes, until the underside takes on a deep brown color.
  • Add sliced scallions and garlic to pan and stir so that most of the kielbasa flips to the other side. Sprinkle with kosher salt and continue to cook for another couple minutes, until scallions begin to soften.
  • Dump steamed rice into skillet with one more glug of neutral oil.
  • Immediately add a couple pinches of salt, a splash of soy sauce, and a couple pinches of white sugar.
  • Stir contents of pan so the scallions, garlic and kielbasa are evenly distributed.
  • Whisk 3 eggs and pinch of salt in a small bowl.
  • Push contents of the skillet to either side so that a strip of exposed pan runs down the middle. There shouldn't be any rice in this section.
  • Egg river! Pour the whisked eggs into the exposed section of the skillet. Let the eggs sit undisturbed for 1-2 minutes, then give them a quick scramble, scraping along the bottom of the skillet. Once the eggs have cooked through, give the whole skillet a stir, distributing the eggs evenly through the rice.
  • Throw big scoop of mixture into a shallow bowl. Top with toasted sesame seeds and a squeeze of lime juice.
