3 tablespoons Cassis
1 bottle good Champagne
6 twists of lemon

Steps:

  • Fill the bottom of 6 Champagne glasses with 1/2 tablespoon Cassis. Pop open a bottle of Champagne and divide among the glasses. The color of the drink should be a sunset pink. Garnish with lemon twists.

2 cups ginger slices, peeled (1/8-inch thick)
1 1/2 cups sugar
2 cups water
1/4 cup blue curacao
1 bottle champagne or sparkling wine

Steps:

  • Mix ginger, sugar, water and curacao all together in a saucepan and bring to a slow simmer. Reduce mix by 50 percent until a syrupy consistency is reached.
