Kittencal's Easy Sweet and Sour Pineapple Meatballs image

You won't find this recipe anywhere else, it's my own creation! I have even made this recipe using left over cooked beef or cooked cubed chicken breast, it is delicious! This recipe may be cut in half to serve just 4. Also 1 large onion may be added. Prep time includes shaping meatballs and chopping veggies. My recipe#69173 works great with this recipe!

2 lbs lean ground beef
oil (for frying)
2 (14 ounce) cans pineapple chunks, drained and reserve juice
1/4 cup cider vinegar (can use less)
3/4 cup brown sugar, packed
1 (250 ml) jar Russian salad dressing (I use Kraft)
1 (350 ml) jar sweet and sour sauce (can be homemade)
1/4 cup soy sauce
2 tablespoons minced fresh garlic
1/2 teaspoon salt
pepper (optional)
sugar, if needed
3 large carrots, sliced
2 green bell peppers (sliced or coarsley chopped)
2 tablespoons cornstarch (optional)
1/4 cup cold water (optional)

Steps:

  • Prepare the ground beef into meatballs using your favorite recipe for meatballs, and shape into about 1-inch balls.
  • Heat oil in a skillet, and brown the meatballs until no longer pink (you can also bake them in the oven) set aside.
  • Drain the 2 cans of pineapple tidbits; set pineapple tidbits aside.
  • If needed, add water to the juice to measure 2 cups, and place in a large saucepan (if the juice from the cans measures more than 2 cups add in all the juice with no water).
  • To the juice/water mixture, stir in vinegar, brown sugar and soy sauce, garlic, salad dressing, sweet and sour sauce, salt and pepper; bring to a simmer (adding more brown sugar (or white sugar) to taste if desired.
  • When the sauce is to desired taste, add in the cooked meatballs and carrots.
  • Simmer for about 25-30 minutes, or until carrots are crisp-tender.
  • Stir in green pepper, and reserved pineapple tidbits; cover and simmer for about 10-15 minutes longer, or until green pepper is crisp-tender (do not over cook the peppers!).
  • This step is only optional if you prefer a thicker sauce, in a small bowl combine cornstarch and water until smooth, and stir into the meatball mixture.
  • Bring to a boil; cook, stirring for about 2 minutes, or until sauce has thickened.
  • Serve over rice.

2 tablespoons finely chopped onion
1 large egg, beaten
3 ½ tablespoons cornstarch, divided
¾ teaspoon salt
1 dash ground black pepper
1 tablespoon vegetable oil
1 (8 ounce) can pineapple chunks, undrained
1 cup pineapple juice, or as needed
¾ cup white sugar
½ cup water
1 tablespoon water
¼ cup white vinegar
2 tablespoons white vinegar
1 ½ tablespoons soy sauce
2 green bell peppers, cut into thin strips
2 cups hot cooked white rice

Steps:

  • Combine ground beef, onion, egg, 1 tablespoon cornstarch, salt, and pepper in a bowl. Use a cookie scoop to shape into meatballs.
  • Heat oil in a large skillet over medium heat. Add meatballs and cook, turning often, until browned and no longer pink in the centers, 7 to 10 minutes. Remove meatballs from the skillet and drain oil, reserving 1 1/2 tablespoons of drippings.

1 (20 ounce) can pineapple chunks, drained with juice reserved
⅓ cup water
3 tablespoons distilled white vinegar

1 large carrot, diced

Don't bother ordering Chinese chicken balls make these at home they are just as good if not even better and the sweet and sour sauce is the same as what is served at your Chinese restaurant!-- these are a great weekend snack or can be served as appetizers, if you want some extra flavor to you chicken batter feel free to add in some garlic or onion powder or spices of choice --- this makes a large amount so you may want to reduce the chicken ball batter amount by half (using 4 chicken breasts) --- NOTE: the sauce recipe is one you may have to make a few times before you get the consistancy and sweetness to your liking, 1 cup white sugar and 1/2 cup lightly packed brown will give you a sweet sauce you may reduce the white sugar amount by a few tablespoons

1 teaspoon soy sauce
1/3 cup white vinegar
1/2 cup brown sugar, lightly packed

1 1/3 cups cold water (if you are reducing to half a recipe use 1/2 cup plus 2-1/2 tablespoons water)
1 -2 teaspoon sesame oil (optional but good to add)

  • To make the sweet and sour sauce sauce; in a saucepan combine the first 5 ingredients until combined.

  • To make the chicken balls: in a large bowl combine flour, cornstarch, baking powder, baking soda, garlic powder; add in water and sesame oil; whisk vigorously until smooth.
  • Add in chicken pieces; using clean handsand mix until well coated.
  • Heat oil in a deep-fryer or Dutch oven to 375 degrees.
  • Carefully dip the battered chicken pieces in hot oil and fry until golden brown (about 3-4 minutes).
  • Remove to a paper towel.
  • Sprinkle with seasoning salt immediately after frying if desired.

If you don't mind the idea of using canned soup this is a delicious tomato sauce, because of the instant rice in the meatballs it will need about 1-1/2 to 2 hours of cooking time , I sometimes remove about 1/2 to 3/4 cup of the simmering sauce cool slightly then mix into the ground beef mixture before shaping into meatballs, you may need to adjust the brown sugar and vinegar amounts during cooking --- for meatballs I use my recipe#69173

1 medium onion, chopped
1 teaspoon dried oregano
1 teaspoon dried basil
6 garlic cloves, finely chopped

1/2 cup water

Steps:

  • For the meatballs; mix the ground beef with ingredients stated in the recipe.
  • Mix in 1-1/2 cups instant uncooked rice.
  • Shape into about 1-1/4--inch balls or as desired, then place onto a plate.
  • For the sauce; in a pot heat oil over medium-high heat.
  • Add in onion, oregano and basil; cook stirring for about 3-4 minutes or until softened.
  • Add in garlic and chili flakes; cook stirring for 2-3 minutes.
  • Add in all remaining sauce ingredients; bring to a simmer stirring over medium heat until well combined.
  • Place the meatballs into the simmering sauce; bring back to a simmer (do not stir the sauce for at least 25 minutes or the meatballs will break apart).

1/4 teaspoon salt
1 medium onion, chopped
1 medium red peppers or 1 medium green pepper, chopped

2 tablespoons white vinegar

1 (8 ounce) can pineapple chunks (reserve syrup)
2 tablespoons sherry wine (optional)

Steps:

  • MAKE MEATBALLS:.

1/2 cup dry breadcrumbs
1/4 cup milk
2 tablespoons finely chopped onions
1 teaspoon salt

1/3 cup vinegar
