2 tablespoons oil
3/4 lb chicken breast, cut into chunks
1/2 onion, cut into chunks
1/2 red bell pepper, cut into chunks
1/2 green bell pepper, cut into chunks
6 dried red chili peppers
1/4 cup ketchup
1 tablespoon hoisin sauce
1 teaspoon hot Chinese chili paste
1/2 cup peanuts

Steps:

  • Heat large skillet or wok until very hot.
  • Add oil.

6 garlic cloves -- minced
3 teaspoons minced fresh ginger
1 red bell pepper -- seeded and chopped
1 1/2 cups snow peas -- cut into 1-inch pieces
3 boneless skinless chicken breasts -- cut into 1-inch
pieces
4 green onions -- cut into 1-inch pieces
6 cups cooked brown rice

  • In small bowl, whisk together honey, soy sauce, vinegar, cornstarch, orange peel and red pepper flakes until thoroughly mixed and cornstarch is dissolved. Set aside.
