Tips:

  • Choose the right type of pasta. Macaroni is the classic choice for this dish, but you can also use other short pastas like penne, shells, or rotini.
  • Cook the pasta al dente. This means cooking it until it is still slightly firm to the bite. Overcooked pasta will become mushy in the casserole.
  • Use a flavorful cheese blend. A combination of cheddar, mozzarella, and Parmesan is a classic choice, but you can also experiment with other cheeses like Monterey Jack, pepper Jack, or Colby Jack.
  • Add some protein. Ground beef, sausage, or chicken are all popular additions to taco macaroni casserole. You can also use beans or tofu for a vegetarian option.
  • Don't skimp on the spices. Taco seasoning is the key to giving this casserole its signature flavor. You can use a store-bought taco seasoning mix or make your own blend with chili powder, cumin, paprika, garlic powder, and onion powder.
  • Top it off with your favorite toppings. Shredded lettuce, diced tomatoes, sour cream, guacamole, and salsa are all popular choices.
