1 head light green cabbage, about 1 . 5 lbs
2 cups grated carrots (grated on large holes of box grater)
4 tablespoons extra virgin olive oil
2 tablespoons fresh lemon juice (or to taste)
salt
1 very finely minced garlic clove (optional)
feta cheese (optional)

Steps:

  • Core the cabbage and shred as for making traditional coleslaw.
