1/2 stick unsalted butter
1/2 teaspoon fresh lemon juice
8 rib lamb chops (3/4 inch thick; 2 pounds)
Garnish: lemon wedges

  • Pat lamb chops dry and sprinkle with 1/2 teaspoon salt and 1/4 teaspoon pepper (total), then broil on rack of broiler pan 4 to 5 inches from heat, turning once, 6 to 7 minutes total for medium-rare. Spread tomato butter over chops.

### Tips
  • To ensure the lamb chops are cooked evenly, it's crucial to bring them to room temperature before searing. This helps them cook more evenly throughout.
  • When searing the lamb chops, make sure the pan is very hot before adding the chops. This will help create a nice crust on the outside while keeping the inside tender and juicy.
  • Baste the lamb chops with the sun-dried tomato butter frequently while they are cooking. This will help infuse them with flavor and prevent them from drying out.
  • If you don't have sun-dried tomatoes, you can use fresh tomatoes instead. Simply roast them in the oven until they are softened and caramelized.
  • Serve the lamb chops immediately after they are cooked, garnished with fresh herbs or a squeeze of lemon juice.
### Conclusion Lamb chops with sun-dried tomato butter is a delicious and easy-to-make dish that is perfect for a special occasion or a weeknight meal.
