Lamb cutlets are succulent and flavorful cuts of meat that are perfect for grilling, pan-searing, or roasting. When paired with tapenade, a Provencal condiment made from olives, capers, and anchovies, lamb cutlets take on a whole new level of deliciousness. The briny, salty flavor of the tapenade complements the rich, gamey flavor of the lamb, creating a harmonious and satisfying dish.

Categories     main-dish

Time 1h30m

Yield 4 to 6 servings

Number Of Ingredients 19

8 to 12 (2-inch thick) T-bone lamb chops
2 sprigs fresh mint, torn or roughly chopped
2 sprigs fresh parsley, torn or roughly chopped
2 sprigs fresh rosemary, torn roughly chopped
2 sprigs fresh thyme, torn or roughly chopped
1 bay leaf
1 lemon, cut in half and squeezed
1/2 teaspoon kosher salt
4 rounds freshly cracked black pepper
1/2 cup extra-virgin olive oil, plus extra for grilling
2 cups pitted kalamata olives
3 tablespoons orange zest
3 tablespoons fresh parsley leaves, rinsed and patted dry
1 anchovy fillet, packed in oil
1 small Anaheim chile, seeded, membrane removed and finely minced
3 to 4 tablespoons extra-virgin olive oil
1 tablespoon orange juice
Kosher salt and freshly cracked black pepper
1/2 cup torn fresh mint leaves, for garnish

Steps:

  • For the marinade: With a sharp knife, clean the chops, trimming away the excess fat cap and any bone fragments. In a medium mixing bowl, combine the mint, parsley, rosemary, thyme, lemon juice, bay leaf, salt and pepper with the olive oil. Place the lamb chops into large resealable plastic bag and pour the marinade over the top. Marinate for up to an hour.
  • For the tapenade: In a food processor, pulse together the olives, orange zest, parsley, anchovy and chile until coarsely chopped. Drizzle in the olive oil and orange juice while continuing to pulse for about a minute, until the ingredients are incorporated and the tapenade is a coarse paste. Do not over process. Season with salt and pepper.
  • For the t-bone lamb chops: Preheat the grill to medium-high heat. Using tongs and an oil-blotted paper towel, wipe down the grill grates to clean and create a nonstick surface. Remove the lamb from the marinade, wiping off excess, and sprinkle with salt and pepper. Place the chops onto grill, fat-side down. Grill for about 2 minutes and rotate 45 degrees to form a crosshatch mark. Continue grilling for another 2 minutes and flip. Rotate the lamb chops 45 degrees to finish and bring to desired cooking temperature, 5 to 6 minutes total for 135 degrees F internal temperature or medium-rare. Remove from the grill and allow to rest.
  • To serve: Arrange the lamb chops on serving dish, garnishing each with about 1 tablespoon tapenade, finishing with torn mint and serving with remaining tapenade on the side.

BONED LEG OF LAMB STUFFED WITH TAPENADE

Boned Leg of Lamb Stuffed with Tapenade image

A tapenade of Nicoise olives, capers, anchovies, and garlic imparts regional French flavors to roasted lamb.

Provided by Martha Stewart

Categories     Food & Cooking     Ingredients     Meat & Poultry     Lamb Recipes

Number Of Ingredients 13

3/4 cup Nicoise olives, pitted
3/4 cup whole almonds
6 anchovy fillets
3 tablespoons capers, rinsed
1 head garlic, cloves separated
3 tablespoons olive oil
1 butterflied leg of lamb (5 to 6 pounds), trimmed of excess fat
Coarse salt and freshly ground pepper
3/4 cup all-purpose flour
2 large eggs, lightly beaten
1 cup plain breadcrumbs, preferably homemade
1 cup dry white wine
1 to 1 1/2 cups homemade or low-sodium canned chicken stock

Steps:

  • Preheat oven to 400 degrees. Make tapenade: In a food processor, combine olives, almonds, anchovies, capers, 3 garlic cloves and 1 1/2 tablespoons oil. Process to form a smooth paste, scraping down sides of bowl as needed, about 2 minutes.
  • Season both sides of lamb generously with salt and pepper. Lay meat on a clean work surface, skin side down. Spread tapenade over the top. Starting with one short end, roll up lamb in the shape of a football; secure with twine.
  • Place the flour on a plate; season with salt and pepper. Place eggs and breadcrumbs separately on two plates. Dredge lamb first in flour, then dip in egg, letting excess drip off. Dredge in breadcrumbs.
  • Place lamb in a small roasting pan, and surround with remaining garlic cloves, 1/2 cup white wine, and 1/2 cup chicken stock. Drizzle remaining 1 1/2 tablespoons oil directly over lamb.
  • Roast in oven until the internal temperature of the lamb reaches 130 degrees on a meat thermometer for medium-rare, 1 1/4 to 1 1/2 hours. If roasting pan becomes too dry, add up to 1/2 cup chicken stock as needed to keep garlic from burning.
  • Transfer lamb to a cutting board, and remove and discard twine; let lamb rest 10 minutes before slicing. Set garlic aside, and pour pan juices from roasting pan into a small bowl, skimming off fat that rises to the top.
  • Make sauce: Place roasting pan over medium heat. Return skimmed cooking juices to pan, and add remaining 1/2 cup wine and 1/2 cup chicken stock. Using a wooden spoon, scrape up any brown bits from the bottom of the pan as the sauce gently boils. Pass sauce and garlic through a fine sieve into a small saucepan, pressing with the spoon to extract as much garlic as possible.
  • Bring liquid to a boil over medium-high heat; reduce heat, and simmer gently, 1 minute. Season with salt and pepper, and serve hot with sliced lamb roast.

Time 30m

Yield 4 servings

Number Of Ingredients 8

12 1-inch-thick medallions of lamb, cut from the rib, leg or loin
3 tablespoons extra virgin olive oil
2 eggs, beaten
Panko or other bread crumbs
Salt and freshly ground black pepper
1 teaspoon ground cumin
Chopped parsley for garnish

If you are using leg slices, put them between 2 pieces of wax paper or plastic wrap and pound with a mallet or rolling pin until they are about 1/2 inch thick. Put a large nonstick or well-seasoned skillet over medium-high heat and add half the oil.
  • When oil shimmers, dip a piece of lamb in eggs, then press both sides into bread crumbs. Put the slices in the skillet; do not crowd. Season with salt, pepper and cumin.
  • As each slice browns, flip it. Adjust heat so that each side browns in about 2 minutes. Keep finished pieces warm in the oven. Add the remaining oil to the pan when necessary. Serve with parsley and lemon slices.

LAMB CUTLETS WITH TAPENADE

Lamb Cutlets with Tapenade image

Another lamb dish that we have really enjoyed. I also like to use this same tapenade on canapes, and so I make extra as it keeps well in the fridge. We also enjoy baby lamb cutlets as part of an antipasto platter.

Tips:

  • Choose high-quality lamb cutlets: Look for cutlets that are evenly thick and have a good amount of marbling. This will ensure that they cook evenly and stay juicy.
  • Trim the lamb cutlets: Remove any excess fat or sinew from the cutlets. This will help them cook more evenly and prevent them from becoming tough.
  • Marinate the lamb cutlets: Marinating the cutlets in a flavorful marinade will help to tenderize them and add flavor. You can use a variety of marinades, such as olive oil, garlic, rosemary, and lemon juice.
  • Cook the lamb cutlets over high heat: This will help to sear the outside of the cutlets and keep them juicy. You can cook the cutlets in a grill pan, skillet, or on an outdoor grill.
  • Let the lamb cutlets rest before serving: This will allow the juices to redistribute throughout the cutlets, making them more tender and flavorful.

Conclusion:

Lamb cutlets with tapenade is a delicious and easy-to-make dish that is perfect for a special occasion or a weeknight meal. By following these tips, you can ensure that your lamb cutlets are cooked perfectly and that they are bursting with flavor.
