4 large eggs
1 cup 2% milk
1 tablespoon honey
1/2 teaspoon ground cinnamon
1/8 teaspoon pepper
12 slices whole wheat bread
Optional: Cinnamon sugar or vanilla frosting

Steps:

  • In a shallow bowl, whisk eggs, milk, honey, cinnamon and pepper. Dip both sides of bread in egg mixture. Cook on a greased hot griddle 3-4 minutes on each side or until golden brown., If desired, sprinkle with cinnamon sugar or frost with vanilla icing. Freeze option: Cool French toast on wire racks. Freeze between layers of waxed paper in a resealable freezer container. To use, reheat French toast in a toaster oven on medium setting. Or, microwave each French toast on high for 30-60 seconds or until heated through.

½ cup brown sugar

⅓ cup half-and-half
5 large egg whites
2 tablespoons confectioners' sugar
2 tablespoons brown sugar
¼ teaspoon vanilla extract
¼ teaspoon lemon extract

2 tablespoons unsalted butter, or more as needed
6 slices bread
½ cup maple syrup, or to taste
3 tablespoons whipped cream, or to taste

Steps:

  • Combine half-and-half, egg whites, confectioners' sugar, brown sugar, vanilla, lemon extract, and salt in a bowl; whip together with a whisk or electric whisk until well blended, about 30 seconds. Pour mixture into a large, flat container.
