LEEK AND TURNIP SOUP WITH KALE AND WALNUT GARNISH

Leek and Turnip Soup With Kale and Walnut Garnish image

I recommend that you make a quick stock with the leek greens, onion and turnips trimmings while you chop the vegetables. Just throw them in a pot with a couple of quarts of water, bring to a simmer, cover partially and simmer 20 minutes. Strain through a fine strainer into a bowl. Kale, which comes from the same botanical family as turnips, makes a complementary garnish and the crunchy walnuts contrast beautifully with the smooth, sweet-tasting soup.

Time 1h30m

Yield Serves 4

Number Of Ingredients 12

1 tablespoon extra virgin olive oil
1 medium onion, chopped
1 to 2 garlic cloves, minced (to taste, optional)
1 1/2 pounds leeks (4 medium), white and light green part only, sliced
1 pound turnips, peeled and cut in wedges
1/4 pound potatoes, peeled and diced, or 1/4 cup medium grain rice
6 cups water or vegetable stock
1 bay leaf
Salt and freshly ground pepper
6 ounces curly kale, stemmed and washed
1 tablespoon walnut oil
1/3 cup (1 1/2 ounces) toasted walnuts, chopped

Steps:

  • Heat the olive oil over medium heat in a large, heavy soup pot or Dutch oven and add the onion. Cook, stirring, until tender, 4 to 5 minutes. Add the leeks and continue to cook, stirring, until they begin to soften, about 3 minutes. Stir in the garlic and cook, stirring, until the garlic smells fragrant, 30 seconds to 1 minute.
  • Add turnips, potatoes or rice, water or stock, bay leaf, and salt, and bring to a boil. Reduce the heat, cover and simmer 45 minutes to an hour. The turnips should be very tender. Remove the bay leaf.
  • While the soup is simmering, blanch the kale in boiling salted water just until tender, 1 1/2 to 2 minutes, or steam for about 3 minutes. Transfer to a bowl of cold water, drain and squeeze out excess water. Place the squeezed bunch of kale on your cutting board and slice into thin slivers. Toss with the walnut oil.
  • Using a hand blender, or in batches in a regular blender, purée the soup. If using a regular blender fill only half way and cover the top with a towel pulled down tight, rather than using the lid, because hot soup will jump and push the top off if the blender is closed airtight. Strain and return to the pot (turnips are fibrous and the soup will have a better texture if you strain it). Return to the pot and heat through, stirring. Season to taste with salt and pepper. Ladle into bowls and top with a spoonful of greens and sprinkling of walnuts.

WINTER VEGETABLE SOUP WITH TURNIPS, CARROTS, POTATOES AND LEEKS

Winter Vegetable Soup With Turnips, Carrots, Potatoes and Leeks image

I use the food mill instead of a blender - immersion or regular - because I love the texture of the soup when it's put through the mill's coarse blade, resulting in a flavorful, colorful mixture that you can almost chew on. But you can use a blender to purée the soup. The texture will be coarsest - which is what you want - if you use an immersion blender.

CARROT, LEEK AND TURNIP SAUTE

Carrot, Leek and Turnip Saute image

Wonderful comfort food. A healthy side dish and a great alternative to potatoes. Love the color! Use your largest skillet, the volume of veggies will cook down, but it helps to start with a little room in the pan. You can also experiment with the amount of butter and olive oil. I plan on cutting it back to 1 Tablespoon of each when I make it next, I don't think anyone will notice. I'm not sure where this recipe originated, in general, if I try it at Mom's house and take the recipe home, I just refer to it as "Mom's carrot, leek, and turnip saute".

Tips:

  • Choose the right leeks. Look for leeks that are firm and have white, unblemished stalks. Avoid leeks that are wilted or have brown spots.
  • Wash the leeks thoroughly. Leeks can be dirty, so it's important to wash them thoroughly before using them. Cut off the root end and slice the leeks in half lengthwise. Rinse them under cold water, making sure to remove any dirt or grit.
  • Use a sharp knife. A sharp knife will make it easier to cut the leeks and other vegetables. A dull knife can make the process more difficult and dangerous.
  • Don't overcrowd the pot. When adding the vegetables to the pot, don't overcrowd it. This will prevent them from cooking evenly.
  • Simmer the soup until the vegetables are tender. This will take about 20 minutes. You can check the vegetables by piercing them with a fork. If they are tender, they are done.
  • Season the soup to taste. Once the vegetables are tender, season the soup with salt and pepper to taste. You can also add other spices, such as garlic powder, onion powder, or thyme.
  • Garnish the soup with kale and walnuts. Before serving, garnish the soup with kale and walnuts. This will add a pop of color and flavor.

Conclusion:

This leek and turnip soup is a delicious and healthy meal that is perfect for a cold winter day. It is easy to make and can be tailored to your own taste. With its creamy texture and flavorful broth, this soup is sure to be a hit with your family and friends. So next time you're looking for a comforting and nutritious meal, give this leek and turnip soup a try.
