1/4 cup champagne vinegar (or other high-quality white wine vinegar)
2 teaspoons Dijon mustard
1/2 shallot, finely chopped
2 teaspoons finely chopped fresh thyme leaves
2 egg yolks, from pasteurized eggs
1 cup pumpkin seed oil or extra-virgin olive oil
1 cup extra-virgin olive oil
1 tablespoon ice water, if needed
1/2 teaspoon sea salt, preferably gray salt
1/4 teaspoon freshly ground black pepper
1/4 cup pumpkin seeds, toasted lightly in oven
1/3 cup all-purpose flour
2 eggs, beaten
2 cups Progresso™ lemon pepper panko crispy bread crumbs
6 tilapia fillets, 5 to 6 oz each
3 tablespoons extra-virgin olive oil
1/2 lemon, cut into 6 wedges
3 small heads of butter lettuce, washed and dried well, torn
1/2 cup pomegranate seeds

Steps:

  • In food processor, place the vinegar, mustard, shallot, thyme and pasteurized egg yolks. Cover; process until smooth. With the machine running, add the 1 cup pumpkin seed oil and then the 1 cup olive oil, 1 tablespoon at a time. If the mixture gets too thick, add the 1 tablespoon ice water. Season with the salt and pepper. Stir in pumpkin seeds. Refrigerate while making tilapia.
  • Place the flour, 2 eggs and the bread crumbs in 3 separate shallow dishes. Dip each fillet in flour then in eggs and finally, dredge on both sides in bread crumbs, shaking off the excess.
  • Heat 2 skillets over high heat. Divide 3 tablespoons olive oil evenly between skillets. When hot, add the fish; reduce heat to medium, and cook until nicely browned, about 5 minutes. Turn fish and cook on the second side until the fish is done throughout (test with a fork), about 4 minutes, depending on thickness.
  • Transfer the fish to 6 individual plates. Garnish with the lemon wedges. Toss the lettuce with a portion of the dressing; divide among plates of fish. Spoon some of the additional dressing over the fish; sprinkle pomegranate seeds over all, and enjoy.

  • Heat oven to 425°F. Spray 15x10x1-inch pan with cooking spray. In medium bowl, toss potato, oil and salt to coat. Spread potato in half of pan. Bake 15 to 20 minutes or until potato is tender.

5 -6 tilapia fillets
2 cups Italian breadcrumbs
2 cups flour

2 eggs, mixed well
1/4 cup milk
3 tablespoons garlic powder
3 tablespoons onion powder
3 tablespoons black pepper
1 cup vegetable oil

Steps:

  • Separate Italian breadcrumbs, egg/milk, and flour into 3 separate mixing bowls.
  • Combine garlic, onion, pepper, Parmesan cheese and breadcrumbs.

1/4 cup Italian seasoned breadcrumbs
2 tablespoons grated parmesan cheese (not the canned kind)
1 teaspoon garlic salt
1 teaspoon grated lemon, rind of
3 tablespoons butter (divided)
1 tablespoon vegetable oil
1 -2 tablespoon lemon juice (or use amount of juice from small lemon used above for lemon peel)

Steps:

  • Rinse fish and pat dry.
  • Combine bread crumbs, parmesan cheese, garlic salt, and lemon peel on waxed paper.
  • Melt 2 tablespoons butter.
  • Dip fillets in melted butter.
  • Coat fillet with crumb mixture.
  • In nonstick skillet, melt remaining 1 tablespoon butter with oil over medium heat.

4 tilapia fillets (1 lb.)
2 carrots, shredded
1 cup sliced fresh mushrooms
2 stalks celery, cut into 1/2-inch-thick slices

  • Pour marinade over all remaining ingredients in resealable plastic bag. Seal bag; turn to evenly coat ingredients with marinade. Refrigerate 30 min. to marinate. Remove ingredients from marinade; discard bag and marinade.
  • Preheat grill to medium-high heat. Place 1 fish fillet in center of each of four 18x12-inch sheets of heavy-duty foil; top with one-fourth of the vegetable mixture. Bring up foil sides. Double fold top and ends to seal each packet, leaving room for heat circulation inside.

2 pinches garlic pepper, divided, or to taste

½ cup fresh bread crumbs
