CREAMY MEYER LEMON DRESSING

Creamy Meyer Lemon Dressing image

This delicate, lemony dressing is wonderful with most lettuces, both delicate and robust. I especially like it with endive. If you can find it, lemon-scented olive oil, sold in some gourmet shops, will add a delicious flavor.

Yield Makes enough for 1 serving

Number Of Ingredients 8

2 tablespoons buttermilk
1 tablespoon, plus 1 teaspoon lemon juice
Zest from 1/4 lemon
1 1/2 teaspoons chopped fresh flat-leaf parsley
1 1/2 teaspoons chopped fresh chives
1/2 teaspoon chopped fresh tarragon
2 tablespoons olive oil
Coarse salt and freshly ground pepper

Steps:

  • In a small bowl, whisk together buttermilk, lemon juice, lemon zest, parsley, chives, and tarragon. Slowly whisk in olive oil; season with salt and pepper.

Tips:

  • To achieve the best flavor, use fresh herbs. If you don't have access to fresh herbs, use dried herbs, but reduce the amount by half.
  • For a tangy dressing, use freshly squeezed lemon juice. If you don't have fresh lemon juice, use bottled lemon juice, but add a little bit of sugar to balance out the acidity.
  • Buttermilk adds a creamy richness to the dressing. You can use whole buttermilk or low-fat buttermilk. If you don't have buttermilk, you can make your own by adding 1 tablespoon of vinegar or lemon juice to 1 cup of milk and letting it sit for 5 minutes. Then stir and use in place of buttermilk.
  • To add a pop of color and flavor, add some chopped fresh chives, dill, or parsley to the dressing.
  • Taste the dressing before serving and adjust the seasonings as needed.

Conclusion:

This lemony herb buttermilk dressing is a versatile and delicious dressing that can be used on a variety of salads, roasted vegetables, and grilled meats. It's also a great way to use up fresh herbs from your garden. With its bright and tangy flavor, this dressing is sure to be a hit at your next gathering.
