LEMON IMPOSSIBLE PIE
A quick and easy dessert recipe using coconut and eggs. I have used mashed banana instead of the lemon juice and I have also tried lime juice and orange juice. The banana is yummy! Serve with cream or ice cream.

Tips:
- For a richer flavor, use real butter instead of margarine.
- If you don't have graham cracker crumbs, you can make your own by crushing graham crackers in a food processor or blender.
- Be sure to use fresh lemon juice for the best flavor. Bottled lemon juice will not give you the same results.
- If you don't have a springform pan, you can use a regular 9-inch pie plate. Just trim the excess crust around the edges.
- Let the pie cool completely before serving. This will help it to set properly.
