SPICY CARAMELIZED SQUASH WITH LEMON AND HAZELNUTS

Spicy Caramelized Squash With Lemon and Hazelnuts image

This ultimate sweet-and-salty squash recipe can be done with most hearty orange vegetables, like sweet potatoes or even carrots (no need to peel any of these). The vegetables are tossed simply with olive oil and something sticky, like maple syrup or honey, and roasted until tender and caramelized. To add some texture back into the mix, the vegetables are finished with toasted nuts and plenty of fresh lemon zest for some perkiness.

Tips:

  • Choose the right squash: Look for butternut squash that is firm and heavy for its size, with a smooth, unblemished skin.
  • Peel the squash carefully: Butternut squash has a tough skin, so it's important to peel it carefully. Use a sharp knife to score the squash lengthwise, then use a spoon to scoop out the seeds. Cut the squash in half, then peel each half with a vegetable peeler.
  • Cut the squash into even-sized pieces: This will help them cook evenly. Cut the squash into 1-inch cubes or slices.
  • Roast the squash at a high temperature: This will help to caramelize the squash and bring out its natural sweetness. Roast the squash at 425 degrees Fahrenheit for 25-30 minutes, or until it is tender and slightly browned.
  • Add flavorings to the squash: Lemon, maple syrup, and spices like cinnamon and nutmeg are all great ways to add flavor to butternut squash. Toss the squash with the flavorings before roasting.

Conclusion:

Lemon maple butternut squash is a delicious and versatile side dish that can be enjoyed all year long. It's perfect for weeknight dinners or special occasions. With its sweet and tangy flavor, this dish is sure to be a hit with everyone at the table.
