LEMONY PICKLED CAULIFLOWER

Lemony Pickled Cauliflower image

The lemon isn't just for flavor. It also helps keep the cauliflower from turning a dull gray. Serve this straight up or drizzle it with some good olive oil to take it from perky pickle to instant marinated salad.

Provided by Marisa McClellan

Time 45m

Yield 10

Number Of Ingredients 8

2 cups distilled white vinegar
2 cups water
2 tablespoons pickling salt
6 slices lemon
3 cloves garlic
1 ½ teaspoons mustard seed
1 ½ teaspoons whole black peppercorns
5 cups small cauliflower florets

Steps:

  • Submerge 3 pint jars on a rack in a large pot of water. Cover and bring to a rolling boil, then reduce heat to low to keep jars warm until ready to fill.
  • Combine vinegar, water, and pickling salt in a saucepan and bring to a boil.
  • Working with one jar at a time, remove empty jars from canning pot and add a lemon slice and 1/3 of the garlic, mustard seeds, and peppercorns to each. Reserve remaining lemon slices for topping. Pack cauliflower into jars, leaving 1/2 inch for headspace.
  • Slowly pour hot brine over cauliflower, leaving 1/2 inch for headspace. Use a clean wooden chopstick to work air bubbles out of jars. Slip in additional veggies if space allows and add a slice of remaining lemon to the top of each jar. Check headspace again and add more brine if necessary to bring to 1/2 inch from top.
  • Wipe jar rims, apply lids and bands (not too tightly), and return jars to canning pot. Cover pot and return water to a rolling boil. Process for 10 minutes. Turn off heat, remove pot lid, and let jars stand in the cooling water 5 minutes to help ensure a good vacuum seal.
  • Move jars to a folded kitchen towel or wooden cutting board to cool completely before checking seals. Any unsealed jars should be refrigerated and eaten promptly. Store sealed jars in a cool, dark place. Sealed jars are shelf-stable at least 1 year.

LEMONY CHICKEN WITH POTATOES AND OREGANO

Lemony Chicken With Potatoes and Oregano image

This might be the easiest roast chicken and potatoes recipe out there. Roasting lemon slices with the potatoes infuses them with a bright, zippy flavor. Then, you can eat the roasted lemon or not - the caramelized, intense flavor is for true lemon lovers only. Serve this with one or two of your favorite condiments on the side for dipping the potatoes.

Provided by Melissa Clark

Categories     dinner, poultry, roasts, vegetables, main course

Time 50m

Yield 2 servings

Number Of Ingredients 8

2 lemons
1 1/4 pounds bone-in, skin-on chicken thighs (2 to 3), patted dry with paper towels (see Tip)
1 1/4 pounds Yukon Gold potatoes, scrubbed, halved and cut into 1/2-inch wedges
1 3/4 teaspoons dried oregano, plus more for serving
1 1/2 teaspoons kosher salt (such as Diamond Crystal), plus more for serving
3/4 teaspoon freshly ground black pepper
3 tablespoons extra-virgin olive oil
Mayonnaise, mustard, ketchup or hot sauce, for serving

Steps:

  • Heat oven to 425 degrees and, if you like, line a sheet pan with parchment paper (not essential but helpful for cleaning up).
  • Trim the ends off 1 lemon, then cut the lemon in half crosswise.Thinly slice one half of the lemon into rounds, then cut the rounds into quarters, creating small triangles. Shake out the seeds then place the lemon quarters into a large bowl. Save the remaining lemon half for serving. Cut the remaining whole lemon into wedges, for serving.
  • Add chicken and potatoes to the large bowl with the lemon quarters. Add the oregano, salt and pepper; toss well. (Your hands are the best tools here.) Drizzle in the oil and toss again.
  • Arrange chicken thighs skin side up on one half of the prepared sheet pan, and potatoes and lemons on the other, spreading the potatoes out into one layer. Roast for 20 minutes. Using a long-handled spoon, stir the potatoes, then spread them out again in one layer. (You don't have to touch the chicken.) Continue roasting until chicken and potatoes are cooked through and everything is golden and crisped, another 15 to 20 minutes (40 to 45 minutes total roasting time).
  • To serve, squeeze the juice from the lemon half all over chicken and potatoes and give everything a good stir to incorporate all the tasty juices and browned bits at the bottom of the pan. Sprinkle with more oregano and salt, and serve with additional lemon wedges and condiments on the side.

Tips:

  • Choose the right mushrooms. Small, firm mushrooms with a mild flavor, such as button mushrooms, oyster mushrooms, or shiitake mushrooms, are best for pickling.
  • Clean the mushrooms thoroughly. Use a soft brush or a damp paper towel to remove any dirt or debris. Be careful not to soak the mushrooms, as this will make them soggy.
  • Slice the mushrooms thinly. This will help them to absorb the pickling liquid more evenly.
  • Use a flavorful pickling liquid. A simple pickling liquid made with vinegar, water, sugar, and spices is a good starting point. You can also add other ingredients, such as herbs, garlic, or citrus zest, to taste.
  • Let the mushrooms pickle for at least 2 weeks. This will give them time to absorb the flavors of the pickling liquid. The longer you pickle the mushrooms, the more flavorful they will be.

Conclusion:

Lemony pickled mushrooms are a delicious and versatile condiment that can be used in a variety of dishes. They are perfect for adding a tangy, savory flavor to sandwiches, salads, and pasta dishes. They can also be used as a garnish for cocktails or as a snack on their own. With a little planning and effort, you can easily make your own lemony pickled mushrooms at home. So what are you waiting for? Give it a try today!
