LEMONY WHITE BEAN HUMMUS

I came up with this recipe after wanting hummus, but not having chickpeas or tahini in the house. This is lemony, creamy, and really good for you! Try with pita bread or raw vegetables. Also good on a tortilla with chopped red bell pepper and olives.

Time 10m

Yield Makes 1 3/4 cups

Number Of Ingredients 6

1 can (15 ounces) white beans, such as cannellini, drained, 2 tablespoons liquid reserved
1/4 cup tahini
1/3 cup fresh lemon juice (from 2 lemons)
2 tablespoons extra-virgin olive oil
1 small garlic clove
Coarse salt

Steps:

  • Puree beans, tahini, lemon juice, oil, and garlic in a food processor until smooth, adding reserved bean liquid as needed to thin hummus to attain desired consistency. Season generously with salt.

Tips:

  • To make the hummus extra creamy, use canned white beans that have been soaked overnight and then cooked until very soft.
  • If you don't have time to soak the beans overnight, you can use canned beans that have been rinsed and drained.
  • For a tangy hummus, use fresh lemon juice. If you only have bottled lemon juice, use half the amount called for in the recipe.
  • Add a clove of garlic for a more savory hummus.
  • Garnish the hummus with chopped fresh parsley, cilantro, or paprika for a pop of color.

Conclusion:

This lemony white bean hummus is a delicious and healthy snack or appetizer. It's easy to make and can be tailored to your own taste preferences. Serve it with pita bread, crackers, or vegetables for a satisfying meal or snack. Enjoy!
