Tips:

  • For the best results, use fresh pumpkin puree. You can make your own puree by roasting a pumpkin and then blending the flesh until smooth.
  • If you don't have pumpkin pie spice, you can make your own by combining ground cinnamon, ground nutmeg, ground ginger, and ground cloves.
  • The dough for these cookies is very soft, so it's important to chill it for at least 30 minutes before baking. This will help the cookies hold their shape in the oven.
  • Bake the cookies until they are just set. Overbaking will make them dry and crumbly.
  • Let the cookies cool completely before frosting them. This will help the frosting set properly.

Conclusion:

These pumpkin cookies are a delicious and festive treat that is perfect for fall. They are soft and chewy, with a warm and spicy flavor. The cream cheese frosting is the perfect finishing touch, adding a touch of sweetness and tang. Whether you're serving them at a party or enjoying them as a snack, these cookies are sure to be a hit.
