BAKED CREAM CHEESE JALAPENO POPPERS

Baked Cream Cheese Jalapeno Poppers image

After a number of unsatisfactory attempts at making deep-fried poppers, I modified a recipe by Emeril that is much easier than frying and everyone in our family agrees that these are at least as good as -- if not better than -- any fried poppers they have had! We love hot peppers and always make a lot of these from the ones we grow in our garden every year.

LIGHT BAKED JALAPENO POPPERS

Recipe courtesy Emeril Lagasse, 2002. I copied this recipe in here because the original site does not offer the calorie count I am looking to know about the recipe. http://www.foodnetwork.com/recipes/emeril-lagasse/baked-jalapeno-poppers-recipe/index.html After fiddling with the recipe in this format, I have made a few modifications to make it a lower calorie recipe. First, no eggs, no milk, no flour, and only 1/4 cup of bread crumbs.

Made these as an appetizer with Mean Chef's Chile Rellenos. They are fabulous and you'd never know they were low fat. I let them cook a little longer than the recipe suggests. These would be PERFECT for any party occasion--superbowl, new year's eve, christmas eve, fourth of july, you name it! Found at weightwatchers.com.

Tips:

  • Choose the right peppers: Bigger, round-shaped peppers are ideal. Remove any blemishes, and cut them in half lengthwise, removing the seeds and ribs.
  • Balancing the flavors: Cream cheese is a classic filling, but feel free to add other ingredients for a unique taste. Some popular options include cheddar cheese, bacon, crab, and shrimp.
  • Achieving a crispy coating: For a golden-brown crispy crust, coat the poppers in breadcrumbs or crushed crackers. You can also use panko breadcrumbs or cornmeal for a different texture.
  • Before baking: Place the poppers on a baking sheet lined with parchment paper, ensuring they're not touching. This helps prevent them from sticking and allows for even cooking.
  • Temperature and timing: Bake the poppers in a preheated oven at 400°F (200°C) for about 15-20 minutes or until the cheese is melted and the coating is crispy. Keep an eye on them to prevent overcooking.
  • Garnish and serving: Once baked, sprinkle some fresh chopped parsley, chives, or green onions on top for an appealing presentation. Serve the poppers hot with your favorite dipping sauce, such as ranch dressing, sour cream, or salsa.

Conclusion:

Light baked jalapeno poppers are a delicious and versatile appetizer or snack that can be enjoyed on various occasions. With their perfect balance of flavors, crispy coating, and customizable fillings, they are sure to be a hit among your friends and family. Experiment with different ingredients and dipping sauces to create your unique variation of this classic dish.
