LIGHT CREAMED SPINACH
Ok, so I was craving for the Spinach with Lemon Stir Fry in a restaurant one day and despite my friend's attempt at explaining what I wanted. The chef came back with his version of how spinanch should be done. Not too bad so here's the copycat. I was thinking of substituting cream with milk and flour. Wonder if it works as well...

Tips:
- Fresh spinach: For the best flavor and texture, use fresh spinach. If you only have frozen spinach, thaw it completely and squeeze out any excess moisture before using.
- Garlic and shallots: These two aromatics add a lot of flavor to the dish. Be sure to mince them finely so that they distribute evenly throughout the spinach.
- Cream: You can use heavy cream, half-and-half, or even milk in this recipe. The type of cream you use will affect the richness and thickness of the sauce.
- Seasoning: Be sure to season the spinach with salt, pepper, and nutmeg. You can also add other spices, such as garlic powder, onion powder, or paprika, to taste.
- Cooking time: Do not overcook the spinach. It should be cooked just until it is wilted and tender. Overcooked spinach will be slimy and mushy.
Conclusion:
This light creamed spinach is a delicious and easy side dish that is perfect for any occasion. It is made with fresh spinach, garlic, shallots, cream, and seasoning. The spinach is cooked until it is wilted and tender, and then it is combined with the creamy sauce. This dish is sure to please everyone at your table.
