Time 1h5m

Yield Makes 2, each cuts into 10 slices

Number Of Ingredients 9

sunflower oil, for greasing
150ml hot black tea
175g malt extract, plus extra for glazing (see tip)
85g dark muscovado sugar
300g mixed dried fruit
2 large eggs, beaten
250g plain flour
1 tsp baking powder
½ tsp bicarbonate of soda

Steps:

  • Heat oven to 150C/130C fan/gas 2. Line the base and ends of two greased 450g/1lb non-stick loaf tins with strips of baking parchment.
  • Pour the hot tea into a mixing bowl with the malt, sugar and dried fruit. Stir well, then add the eggs.
  • Tip in the flour, then quickly stir in the baking powder and bicarbonate of soda and pour into the prepared tins. Bake for 50 mins until firm and well risen. While still warm, brush with a little more malt to glaze and leave to cool.
  • Remove from the tins. If you can bear not to eat it straight away, it gets more sticky after wrapping and keeping for 2-5 days. Serve sliced and buttered, if you like.

CLASSIC MEATLOAF

Categories     Food & Cooking     Ingredients     Meat & Poultry     Beef Recipes     Ground Beef Recipes

Number Of Ingredients 15

3 thick slices white bread, torn into large pieces
2 garlic cloves, chopped
1 medium onion, chopped
1 celery stalk, chopped
1 medium carrot, chopped
1/2 cup flat-leaf parsley
12 ounces ground beef chuck (90 percent lean), preferably pasture-raised
12 ounces ground pork, preferably pasture-raised
12 ounces ground veal, preferably milk-fed
1 large egg
3/4 cup ketchup
1 tablespoon Dijon mustard
1 tablespoon Worcestershire sauce
Coarse salt and freshly ground pepper
2 tablespoons light-brown sugar

Steps:

  • Preheat oven to 375 degrees. Pulse bread in a food processor until finely ground. (You should have about 2 1/2 cups breadcrumbs.) Transfer to a medium bowl.
  • Pulse garlic, onion, celery, carrot, and parsley in food processor until finely chopped. Add to breadcrumbs. Add meats, egg, 1/4 cup ketchup, the mustard, Worcestershire sauce, 1 tablespoon salt, and 1/2 teaspoon pepper; mix together using your hands. Transfer mixture to a 5-by-9-inch loaf pan.
  • Stir together remaining 1/2 cup ketchup and the brown sugar until smooth; brush onto meat. Set pan on a rimmed baking sheet, and bake until an instant-read thermometer inserted into the center reaches 160 degrees, about 1 hour 20 minutes. Let cool slightly.

Tips:

  • Use fresh ingredients. This will ensure that your malt loaf is flavorful and moist.
  • Measure your ingredients accurately. This is important for the success of any recipe, but especially for baking. If you don't measure your ingredients correctly, your malt loaf may not turn out as expected.
  • Don't overmix the batter. Overmixing can make your malt loaf tough. Mix the batter just until the ingredients are combined.
  • Bake the malt loaf in a greased and floured loaf pan. This will prevent the loaf from sticking to the pan.
  • Let the malt loaf cool completely before slicing it. This will help to prevent it from crumbling.

Conclusion:

Malt loaf is a delicious and easy-to-make bread that can be enjoyed for breakfast, lunch, or dinner. With its slightly sweet and nutty flavor, malt loaf is a perfect complement to a variety of dishes. Whether you're looking for a quick snack or a hearty meal, malt loaf is a great option. So next time you're in the mood for something delicious and satisfying, give malt loaf a try!
