1 (16 ounce) package dried lima beans, sorted and rinsed
1 lb kielbasa, cut into 1/4 inch slices
2 medium carrots, cut into 1/4 inch slices (about 1 cup)
2 stalks celery, chopped (about 1 cup)
1 large onion, finely chopped
2 garlic cloves, finely chopped
6 cups water (I use 3 cups water, 3 cups broth, any kind works)
1 teaspoon salt
1/2 teaspoon pepper
1 (14 1/2 ounce) can diced tomatoes, undrained

Steps:

  • Mix all ingredients except tomatoes in a 5 to 6 quart slow cooker.
  • Cover and cook on high for 10 to 12 hours or until beans are tender.
  • Stir in tomatoes.
  • Cover and cook on high for about 15 minutes or until hot.

2 cans (14-1/2 ounces each) reduced-sodium chicken broth
1 medium potato, peeled and cubed
1/2 pound smoked turkey kielbasa or turkey sausage, cut into 1/4-inch slices
3 cups shredded cabbage
1 can (15 ounces) garbanzo beans or chickpeas, rinsed and drained
1 cup sliced fresh carrots
2 tablespoons minced fresh parsley
1 tablespoon white wine vinegar
1/2 teaspoon pepper

2 (14 1/2 ounce) cans beef broth
1/2 cup water
1 large potato, peeled and diced
2 carrots, peeled and thinly sliced
2 stalks celery, thinly sliced
1/2 cup diced yellow onion
16 ounces kielbasa, thinly sliced
2 (11 1/2 ounce) cans campbell's bean with bacon soup
black pepper, season to taste

Steps:

  • In a kettle or Dutch oven, add broth, water and vegetables.
  • Bring to a boil; reduce heat, and simmer for 10 minutes.
  • Add both cans of soup, and the sliced kielbasa.

1 pound dry lima beans
4 cups water
5 carrots, chopped
1 leek, bulb only, chopped
2 tablespoons minced shallots
2 stalks celery, chopped
4 cubes vegetable bouillon
8 cups water
2 tablespoons olive oil

Steps:

  • Bring 4 cups of water to a boil. Add dry lima beans, and boil for 2 to 3 minutes. Remove from heat, and allow the beans to sit, covered, for 1 to 2 hours to soften. Drain and rinse until water runs clear, discarding bean water.
  • In a soup pot, saute vegetables in olive oil until onions and celery are translucent. Add lima beans, and saute for another 2 to 3 minutes.
  • In the meantime, bring 4 cups of water to a boil. Add the vegetable bouillon to the boiling water, and stir until dissolved. Add broth to the sauteed vegetables and beans. Add remaining water, and allow soup to simmer over a low flame for 1 to 1 1/2 hours. Serve steaming hot.
