1 bottle (16 ounces) fat-free Italian salad dressing
1/2 cup lime juice
1 lime, halved and sliced
3 garlic cloves, minced
1 teaspoon dried thyme
4 boneless skinless chicken breast halves (1 pound)

Steps:

  • In a bowl, combine the first five ingredients. Remove 1/2 cup for basting; cover and refrigerate. Pour remaining marinade into a large resealable plastic bag; add chicken. Seal bag and turn to coat; refrigerate for 8-10 hours., Drain and discard marinade. Grill chicken, uncovered, over medium heat for 5 minutes. Turn chicken; baste with the reserved marinade. Grill 5-7 minutes longer or until juices run clear, basting occasionally.

2/3 cup Italian salad dressing
2 teaspoons minced garlic
2 teaspoons dried basil

1 (6 ounce) package Uncle Ben's converted brand rice, natural select garlic & butter rice
4 boneless skinless chicken breasts
1/2 cup soy sauce
1 whole lime, juice and zest of
1/4 cup cilantro, chopped
1 tablespoon fresh ginger, finely chopped
3 tablespoons sesame oil, divided
1 red pepper, diced
3 green onions, cut into pieces

Steps:

  • Marinate chicken in soy sauce, lime juice & zest, cilantro and ginger for 30 minutes.
  • Prepare rice according to package directions.
  • Heat 2 tablespoons sesame oil in saute pan over medium-high heat and cook chicken.

1 bunch scallions, chopped
1/2 bunch cilantro, plus more for garnish
5 garlic cloves, roughly chopped
1 jalapeño, seeded if you like
1/4 cup fish sauce

Juice of 2 limes, plus 1 lime for garnish
3 tablespoons neutral oil, such as sunflower or grapeseed
2 pounds boneless chicken thighs, preferably with skins attached (ask your butcher)

Steps:

  • Place scallions, cilantro, garlic, jalapeño, fish sauce, honey, lime juice and 2 tablespoons oil in a blender. Purée until smooth.
