LINGUINE WITH SHRIMP AND SCALLOPS IN THAI GREEN CURRY SAUCE
This is a great pasta dish to serve for company. Chances are good that you'll find the Asian ingredients- increasingly carried by everyday food shops-at your local supermarket. We used the Thai Kitchen brand, which is widely available.

Steps:
- Heat 1 tablespoon oil in a 12-inch nonstick skillet over moderately high heat until hot but not smoking, then sauté chile and white parts of scallions, stirring occasionally, until lightly browned. Transfer with a slotted spoon to paper towels to drain.
- Pat scallops and shrimp dry separately and season with salt. Heat remaining 1 1/2 tablespoons oil in same skillet over moderately high heat until hot but not smoking, then cook scallops until browned, 2 to 3 minutes on each side (scallops will be almost cooked through). Transfer scallops to a bowl with slotted spoon and sauté shrimp in same skillet, stirring occasionally, until almost cooked through, about 3 minutes. Add shrimp to scallops.
- Add coconut milk, curry paste, broth, brown sugar, fish sauce, and lime juice to skillet, then simmer, stirring occasionally, 5 minutes.
- Meanwhile, cook linguine in a 6- to 8-quart pot of boiling salted water until al dente, then drain in a colander.
- Stir scallops and shrimp with any liquid in bowl into sauce in skillet and heat to boiling. Reduce heat and simmer until scallops and shrimp are just cooked through, about 2 minutes. Transfer seafood to a clean bowl with slotted spoon and add linguine and cilantro to sauce in skillet, tossing to coat.
- Divide pasta and sauce among 4 bowls. Top with seafood and sprinkle with scallion greens and chile mixture.

LINGUINE WITH SCALLOPS AND SHRIMP IN THAI GREEN CURRY SAUCE
A delicious Thai dish from Gourmet, December 2000. The sauce is a little thin so I like to thicken the sauce at the end of preparation with a cornstarch/water mixture.

Fragrant Thai curry paste and creamy light coconut milk create a silky, complex sauce that coats long strands of pasta, green beans, and shrimp. Tips for Making Linguine with Scallops and Shrimp in Thai Green Curry Sauce:
- **Mise en place:** Before you start cooking, ensure all your ingredients are prepped and measured. This will make the process smoother and ensure you don't miss anything while cooking. - **Use fresh and high-quality seafood:** The quality of your seafood will significantly impact the dish's overall flavor. Look for plump, opaque scallops and shrimp with a fresh, briny smell. - **Don't overcook the seafood:** Seafood cooks quickly, so be careful not to overcook it. Overcooked seafood becomes tough and rubbery, losing its delicate flavor and texture. - **Use a large skillet or pot:** A large skillet or pot will provide enough space for the noodles, seafood, and sauce to cook evenly without overcrowding. - **Use full-fat coconut milk:** Full-fat coconut milk gives the sauce a rich, creamy texture and a more authentic Thai flavor. - **Add vegetables:** Feel free to add your favorite vegetables to the dish, such as broccoli, bell peppers, or bamboo shoots. This will add extra color, texture, and nutrients to the dish. - **Adjust the heat level:** If you don't like spicy food, you can use less green curry paste or add a dollop of coconut milk to tone down the heat. - **Garnish the dish:** Before serving, garnish the dish with fresh cilantro, basil, or lime wedges to add vibrancy and extra flavor. Conclusion:
This linguine with scallops and shrimp in Thai green curry sauce is an easy yet impressive dish that combines the delicate flavors of seafood with the vibrant aromatics of Thai green curry. The creamy coconut milk-based sauce, tender seafood, and al dente linguine come together in a harmonious blend that will tantalize your taste buds. Whether you're entertaining guests or craving a flavorful weeknight meal, this recipe is sure to be a hit.
