1 tbsp olive oil, plus more for greasing pan
3 cups cooked whole grains (I use bulgar mostly)
2 cooked Italian-style chicken sausages, diced (I frequently sub black or garbanzo beans for this. I like to make it vegetarian)
1 cup grated provolone
1 15 oz can of diced tomatoes with liquid
1 large red bell pepper, seeded and diced
1/3 chopped fresh parsley or basil
1/4 cup pine nuts
1/4 cup grated Romano cheese
1 tsp minced garlic
1 tsp dried oregano
1/4-1/2 tsp crushed red pepper flakes
salt and pepper to taste

Steps:

  • Preheat oven to 375. Grease an 8 inch square baking pan. In a large bowel combine all of the ingredients, holding back 1/4 cup provolone. Place in pan, cover with foil and bake until hot (30-35 min) Uncover and sprinkle the remaining cheese on top. Baike until cheese is melted and caserole is bubbly, 3-5 min.

2 cups potatoes, cubed
2 cups cooked ham, cubed
1 (15.25 ounce) can whole kernel corn, drained
¼ cup finely minced fresh parsley
¼ cup butter
1 tablespoon chopped onions
⅓ cup all-purpose flour
1 ¾ cups milk
⅛ teaspoon ground black pepper
4 ounces processed cheese food, shredded

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Bring a large pot of salted water to a boil. Add potatoes and cook until tender but still firm, about 15 minutes. Drain and cool.
  • Combine potatoes, ham, corn and parsley; set aside. In a saucepan saute onion in butter for 2 minutes, stir in flour until blended well. Gradually add milk and pepper. Bring to a boil. Cook and stir for 2 minutes. Remove from heat and pour over the ham mixture. Stir to mix well.
  • Pour into greased 11x7 baking dish. Cover and bake for 25 minutes. Uncover, sprinkle with cheese and bake 5 to 10 minutes longer until cheese melts.

5 medium carrots, thinly sliced
2 cups frozen corn, thawed
1 medium onion, diced
1 cup quick-cooking barley
1/2 cup bulgur
1/3 cup minced fresh parsley
1 teaspoon salt
1/2 teaspoon pepper
3 cups vegetable broth
1 can (15 ounces) black beans, rinsed and drained
1-1/2 cups shredded reduced-fat cheddar cheese

Steps:

  • Preheat oven to 350°. In a large bowl, combine carrots, corn, onion, barley, bulgur, parsley, salt and pepper. Stir in broth and beans. Transfer to a 13x9-in. baking dish coated with cooking spray., Cover and bake 50-55 minutes or until grains are tender, stirring once. Sprinkle with cheese. 1 lb pork sausage
1/2 cup onion, chopped
1 1/2 cups cheddar cheese, shredded, divided
1 (10 ounce) package frozen chopped spinach, thawed and well drained
1 (4 1/2 ounce) jar sliced mushrooms, drained
12 eggs
2 cups heavy cream
1/4 teaspoon ground nutmeg

Steps:

  • In a skillet, cook sausage and onion until the sausage is browned and the onion is tender; drain.
  • Remove from the heat; stir in 1 cup cheese, spinach and mushrooms.
  • Transfer to a greased 9x13 baking dish.
  • In a bowl beat eggs. Add cream and nutmeg; mix well. Pour over sausage mixture.
  • Bake, uncovered, at 350°F or until a knife inserted near the center comes out clean. Sprinkle with remaining cheese.
  • Let stand 5 minutes before cutting.
