Cajun Burgers are always on the menu whenever we have company over for a backyard cookout. Like my husband, I was raised in the country. CAJUN SEASONING BLEND:
3 tablespoons ground cumin
3 tablespoons dried oregano
1 tablespoon garlic powder
1 tablespoon paprika
2 teaspoons salt
1 teaspoon cayenne pepper
BURGERS:
1 pound ground beef
1/4 cup finely chopped onion
1 teaspoon salt
1 teaspoon Cajun Seasoning Blend (recipe above)
1/2 to 1 teaspoon hot pepper sauce
1/2 teaspoon dried thyme
1/4 teaspoon dried basil
1 garlic clove, minced
4 hamburger buns
Sauteed onions, optional

Steps:

  • Combine all seasoning blend ingredients in a small bowl or resealable plastic bag; mix well. , In a bowl, combine the first eight burger ingredients; shape into four patties. Cook in a skillet or grill over medium-hot heat for 4-5 minutes per side or until burgers reach desired doneness. , Serve on buns; top with sauteed onions if desired. Store remaining seasoning blend in an airtight container.

2 tablespoons unsalted butter
2 tablespoons extra virgin olive oil
1 medium red onion, about 2 cups, diced
1 medium green bell pepper, about 1 ½ cups, diced
1 small yellow bell pepper, about ¾ cups, diced
¾ teaspoon kosher salt
½ teaspoon red pepper flakes
3 large garlic cloves, minced
3 tablespoons spicy brown mustard
3 tablespoons mayonnaise
1-2 teaspoons hot sauce, to taste
4 Jennie-O 1/3 lb. Seasoned Turkey Burgers, frozen
4 onion buns, halved
Étouffée Relish
Creamy Cajun Sauce
4 leaves butter lettuce

Steps:

  • In a heavy-bottomed skillet, melt the butter and olive oil together over medium-low heat.
  • When the butter has completely melted, add the onion and bell peppers.
  • Season with salt and the red pepper flakes.
  • Cook low and slow for 35-45 minutes, or until the vegetables have softened significantly and can be easily smeared on a slice of bread or a burger. (It's the consistency that you're looking for here! We want 'em soft, but not indistinguishable.)
  • When the relish is done, remove from the heat, and set aside.
  • In a bowl, combine the mustard and mayonnaise.
  • Taste the sauce, then add 1-2 teaspoons of the hot sauce to taste. (Do this slowly so you don't singe your tastebuds.)
  • Set aside for later.
  • Heat the grill or a grill pan to medium-high heat.
  • Place the frozen Jennie-O burgers onto the preheated grill, a few inches from the heating source. Cook for 9-10 minutes on each side, turning twice, until the internal temperature of the burgers reads 165°F.
  • While the burgers cook, toast the onion buns on the grill, too, just enough to have grill marks on the bread, then remove.
  • Dollop some of the sauce onto the bottoms of the buns, then add a leaf of butter lettuce. Set aside for when the burgers have finished.
  • Once the burgers have cooked, remove from the heat using a spatula.
  • Transfer the cooked burgers on top of the prepared buns.
  • Smear Étouffée Relish on top of the burgers, then top with more sauce and the top of the bun.
  • Serve immediately, and enjoy!

1 (28-ounce) bag curly fries (recommended: Ore-Ida)
1 tablespoon olive oil
1 tablespoon Cajun seasoning
1/2 teaspoon cayenne pepper
1 1/4 pounds ground turkey
1 cup frozen chopped onions and bell peppers, thawed
1/4 cup real bacon pieces
2 teaspoons Cajun seasoning
1/2 teaspoon hot sauce
1/2 teaspoon salt
1/2 teaspoon ground black pepper
4 onion buns
4 leaves butter lettuce
4 slices tomato
4 slices red onion
1/2 cup ranch dressing
1 tablespoon hot sauce
1 scallion, finely chopped

Steps:

  • Preheat oven to 400 degrees F.
  • In large bowl combine all ingredients and toss until fries are well coated. Transfer to a baking sheet and bake for 20 minutes or until crispy.
  • In small bowl combine all ingredients and mix until blended. Set aside.;
  • Preheat a grill pan over medium-high heat.
  • In a bowl mix together the ground turkey, onions and bell peppers, bacon pieces, Cajun seasoning, hot sauce, salt, and ground black pepper.
  • Wet hands to prevent sticking, and form 4 patties of equal size. Spray grill pan with cooking spray.
  • Reduce heat to medium and cook patties for 5 to 7 minutes per side or until cooked through.
  • Place all the ingredients into a small serving bowl and stir until combined.
  • Place the cooked burgers on the buns and serve with lettuce, tomato, onion and ranch dressing.

2 1/2 lbs ground beef
1/2 lb pork sausage (homemade)
1 teaspoon Worcestershire sauce
1 tablespoon steak sauce (optional)
2 tablespoons catsup (or BBQ sauce)
3 -4 dashes louisiana hot sauce
3 -4 drops liquid crab boil concentrate
1 teaspoon garlic powder
2 teaspoons creole seasoning
1 medium onion (minced)
1/2 medium bell pepper (minced)
1/4 cup water
2 large eggs

Steps:

  • Remove sausage from the casing & combine both meats in a bowl. Add the remaining ingredients & mix well. Let the mixture rest in the refrigerator for at least 1 hr for seasonings to "work".
  • Form hamburger patties as usual & make them about 3/4" larger than the bun. The burgers will shrink, so doing this will give you a "bun-fitting" hamburger patty.
  • Cook hamburgers on high heat on ea side for about 1 minute. Then finish them on a med low heat till done (An internal temp of 160F is recommended by the USDA).
  • When done, spray them on both sides w/a water mist & sprinkle a little salt on them. Serve immediately.
  • If not serving immediately, put the patties in a pan w/only enough water to cover the bottom. Keep them covered so they don't dry out. Doing all of this will give you a slightly moister hamburger patty.

  • Preheat an outdoor grill for high heat and lightly oil grate.
