SHRIMP SAUCE PIQUANT
This Paul Prudhomme recipe (that I found on the internet somewhere) is only for the true chile head- but if you are one (like me) it just doesn't get any better than this. He mentions in his notes that the amount of jalapeno in the recipe can be halved for a lower heat level, but if you are worried about that, this recipe is definitely not for you. OOOH, it hurts so good !!!

Tips:
- For the freshest shrimp, opt for wild-caught shrimp whenever possible. If using frozen shrimp, thaw them thoroughly before cooking.
- When deveining shrimp, use a sharp knife to make a shallow incision along the back of the shrimp. Remove the dark vein that runs through the center of the shrimp.
- To make the piquant sauce, use a variety of fresh vegetables, such as onions, celery, and bell peppers. Chop the vegetables finely so that they cook evenly.
- Use a good quality white wine for the piquant sauce. A dry wine, such as a Sauvignon Blanc or Pinot Grigio, will work well.
- Add a pinch of cayenne pepper to the piquant sauce for a bit of heat. You can also add other spices, such as paprika, garlic powder, or onion powder, to taste.
- Cook the shrimp in the piquant sauce until they are pink and opaque. Overcooking will make the shrimp tough.
- Serve the shrimp with rice, pasta, or your favorite side dish.
