Number Of Ingredients 12

2 large russet potatoes
¾ cup sour cream
2 cloves garlic, minced
½ teaspoon cumin
salt, to taste
½ teaspoon oregano
8 corn tortillas
oil, for frying
sour cream, to taste

  • Place softened potatoes into a large bowl. Mix in sour cream, garlic, cumin, salt pepper and oregano, and mash until well combined.

  • Heat one inch of vegetable oil in a pan. Carefully, place the potato tacos in the pan, allowing them to cook for about two minutes on each side.

Tips for Making Low-Carb Taco Potatoes:

  • Choose the right potato: Use a low-carb potato variety like Yukon Gold or red potatoes. These potatoes have a lower starch content and will hold their shape better when roasted.
  • Cut the potatoes into uniform pieces: This will help them cook evenly. Aim for 1-inch cubes or wedges.
  • Toss the potatoes with olive oil and seasonings: This will help them crisp up in the oven and add flavor. You can use any seasonings you like, but taco seasoning is a classic choice.
  • Roast the potatoes at a high temperature: This will help them get crispy on the outside and tender on the inside. Aim for 425°F (220°C) for about 20 minutes, or until the potatoes are cooked through and browned.
  • Serve immediately: Low-carb taco potatoes are best served hot and fresh out of the oven. You can top them with your favorite taco toppings, such as salsa, guacamole, sour cream, and cheese.

Conclusion:

Low-carb taco potatoes are a delicious and easy way to enjoy a taco night without all the carbs. They're perfect for those who are following a low-carb diet or simply looking for a healthier alternative to traditional tacos. With just a few simple ingredients and a little bit of time, you can have a delicious and satisfying meal that the whole family will love.
