1 (14 1/2 ounce) can chopped tomatoes
1 (14 ounce) can low sodium chicken broth
1/2 cup fresh basil leaf, minced
1 tablespoon tomato paste
1 bay leaf
1/2 teaspoon dried thyme leaves
1 1/2 lbs chicken breasts, with ribs (2)
1 (15 ounce) can kidney beans, drained (rinsed)

  • Discard the bay leaf.
  • Add the kidney beans to the pot and simmer until the liquid has reduced into a stew consistency, about 10 minutes.

Yield 4 bowls

Number Of Ingredients 12

•1 large onion, roughly chopped
•1 large carrot, diced
•1 large stick celery, sliced
•2 cloves garlic, minced
•2 cups sliced mushrooms
•1 1/4 pounds boneless, skinless chicken breasts, cut into pieces
•1 tsp dried thyme
•1 tsp dried oregano
•1/2 cup red wine
•3/4 cup fat-free, low-sodium chicken broth
•1/4 cup tomato paste
•Cornstarch slurry to thicken, if desired

Steps:

  • Coat inside of 3-4 quart slow cooker with nonstick cooking spray. Place onion, carrots, celery, garlic and mushrooms in crockpot. Add chicken. Sprinkle with herbs. Add wine. Combine tomato paste and chicken broth, then add to crockpot. Cook on low for 6 hours. Half an hour before the end of cooking, you can add a cornstarch slurry (1 tbsp cornstarch to 1/4 cup of water or slightly cooled cooking liquid) to thicken the sauce.

Tips:

  • Choose lean chicken breasts or thighs: These cuts have less fat than other parts of the chicken.
  • Use a variety of vegetables: This will add flavor and nutrients to your stew.
  • Don't skimp on the spices: They will help to enhance the flavor of the stew.
  • Cook the stew on low heat for a long time: This will help to tenderize the chicken and vegetables.
  • Serve the stew with a side of whole-wheat bread or rice: This will help to round out the meal.

Conclusion:

Low-fat chicken stew is a delicious and healthy meal that can be enjoyed by the whole family. It is a great way to use up leftover chicken, and it is also a budget-friendly meal. With a little planning, you can easily make a low-fat chicken stew that is both tasty and nutritious.
