I found this on the internet, I think on a Cabot cheese site, when looking for a way to use up some leftover egg whites. I like it for breakfast or brunch with fruit salad but it could easily be a side dish for dinner.

Tips:

  • Prep your spinach: Before you start cooking, make sure to wash and chop your spinach. You can use fresh or frozen spinach for this recipe.
  • Use a nonstick skillet: A nonstick skillet will help prevent the quiche from sticking and make it easier to flip.
  • Cook the spinach until it is wilted: You want the spinach to be soft and wilted before you add it to the quiche mixture.
  • Don't overcook the eggs: The quiche is done when the eggs are just set. Overcooking the eggs will make them tough.
  • Let the quiche cool slightly before serving: This will help it hold its shape when you cut it.

Conclusion:

This low-fat crustless spinach quiche is a delicious and healthy breakfast, lunch, or dinner option. It is packed with protein, fiber, and vitamins, and it is also low in calories and fat. The quiche is easy to make and can be customized to your liking. You can add different vegetables, cheeses, or herbs, or you can even make it a gluten-free quiche by using gluten-free flour. No matter how you make it, this quiche is sure to be a hit!
