Time 40m

Number Of Ingredients 15

1¼ cups yellow onions, diced
1 cup carrots, diced
1 cup celery, diced
½ cup red bell peppers, diced
Cooking spray, (I like olive oil cooking spray)
1 tablespoon garlic, minced
1½ teaspoons chili powder
½ teaspoon red pepper flakes
6 cups reduced-sodium chicken broth, (I used Swanson's)
2 cups cooked chicken breasts, diced or shredded, (see shopping tips)
1 (14½ ounce) can diced tomatoes
⅔ cup chunky or creamy peanut butter, (see shopping tips)
⅓ cup dry instant whole-wheat couscous, (see shopping tips)
4 cups fresh spinach leaves
½ cup scallions, chopped ((optional, for topping))

Steps:

  • In a microwave-safe plate or bowl, add onions, carrots, celery, and red bell pepper. Cook in microwave for about 4 minutes until vegetables are softened.
  • Coat a large nonstick pan or soup pot with cooking spray. Add cooked vegetables, garlic, chili powder, and red pepper flakes. Sauté for about 1 minute. Stir often.
  • Stir in broth, chicken, and tomatoes. Bring to a boil, reduce heat to low, and simmer for 10 minutes.
  • Stir in peanut butter with a fork. Make sure the peanut butter gets well blended. Add couscous, spinach and mix well. Cover, remove from heat. Allow sitting 5 minutes.
  • To serve: Ladle 1¼ cups into each bowl. Garnish each serving with 1 tablespoon chopped scallions if desired.
  • This soup will keep in refrigerated for several days. Leftovers are wonderful for lunch. This soup freezes great, too!

SENEGALESE CHICKEN AND PEANUT SOUP

Senegalese Chicken and Peanut Soup image

This is an award winning soup recipe. The soup should be silky and smooth but not thick; it should be spicy, but not too hot; it should have a sharpness of tomato and lemon, but not be sour; it should taste of peanuts, but not of peanut butter. It freezes beautifully. Note - I just adopted this one -- it was originally posted by my friend Mean Chef -- the intro is perfect and is exactly what you should be tasting in the final product! :-)

Number Of Ingredients 10

1 pound skinless boneless chicken breast halves, cut into 3/4- to- 1-inch cubes
1 tablespoon hot sauce
4 cups low-salt chicken broth
1/3 cup creamy peanut butter (do not use natural or old-fashioned)

  • Melt butter in large pot over medium-high heat. Add chopped onion and zucchini; sauté until tender, about 8 minutes. Add chicken and sauté until no longer pink on outside, about 3 minutes. Sprinkle with flour and cook 1 minute, stirring occasionally.
  • Add broth mixture and tomatoes to pot. Simmer until chicken is cooked through and flavors blend, about 5 minutes. Season soup to taste with salt and pepper. Serve.

Tips:

  • Use low-glycemic index (GI) ingredients: Low-GI foods release their sugar slowly into the bloodstream, helping to keep blood sugar levels stable. Some low-GI ingredients in this recipe include peanut butter, chicken, vegetables, and brown rice.
  • Make your own peanut sauce: Store-bought peanut sauces often contain high levels of added sugar and unhealthy fats. Making your own peanut sauce allows you to control the ingredients and ensure that it is low in sugar and healthy fats.
  • Use a variety of vegetables: Vegetables add flavor, nutrients, and fiber to this soup. Feel free to add any vegetables that you have on hand or that you enjoy. Some good options include carrots, celery, broccoli, and bell peppers.
  • Cook the chicken ahead of time: If you are short on time, you can cook the chicken ahead of time and shred it. This will save you time when you are making the soup.
  • Serve with brown rice: Brown rice is a low-GI grain that will help to keep blood sugar levels stable. It is also a good source of fiber and nutrients.

Conclusion:

This Low-GL Peanut Chicken Soup is a delicious and healthy meal that is perfect for people with diabetes or anyone who is looking to eat a healthier diet. It is packed with flavor and nutrients, and it is also easy to make. So next time you are looking for a quick and easy weeknight meal, give this soup a try!
