Time 30m

Yield 6-8 , 6-8 serving(s)

Number Of Ingredients 5

6 -8 cups shredded cabbage
4 tablespoons granulated sugar
3 tablespoons cider vinegar
1 teaspoon salt
1 cup mayonnaise

Steps:

  • Take off outer leaves of cabbage. Core cabbage and cut cabbage into narrow wedges, then slice wedges into thin strips. Place strips into a large bowl.
  • Add sugar and salt, mix well. Let stand at room temperature for 10 - 15 minutes.
  • Add vinegar, and mayonnaise, mix. Cover and refrigerate for a minimum of four hours. Makes 6 - 8 servings.
  • Note: Can add any of the following to the cole slaw: celery seeds, shredded carrots, green pepper, raisins, chopped apples, red cabbage, nuts, pineapple, etc.

Tips:

  • Use a sharp knife or mandoline to thinly slice the cabbage. This will help the slaw to be tender and flavorful.
  • Shred the carrot and onion by hand or use a food processor. Grating the carrot will make it too mushy.
  • Use a combination of white and red cabbage for a colorful slaw. You can also add other vegetables, such as broccoli, cauliflower, or bell pepper.
  • Make the dressing ahead of time and let it chill in the refrigerator for at least 30 minutes. This will allow the flavors to meld together.
  • Taste the slaw before serving and adjust the seasonings to your liking. You can add more vinegar, sugar, or salt if needed.

Conclusion:

Luby's Cafeteria's Spanish Cole Slaw is a delicious and refreshing side dish that is perfect for any occasion. It is easy to make and can be tailored to your own taste. So next time you are looking for a simple and delicious slaw, give this recipe a try. You won't be disappointed!
