Steps:

  • Preheat a grill or stove-top grill pan.
  • Place Italian country loaf on a work surface and slice 8 thick slices. Place bread on a grill pan and grill until the slices are well browned on both sides.
  • In a large pot of boiling water, blanch the greens and then drain on paper towels. Set aside.

2 tablespoons butter
2 teaspoons minced garlic
1/2 cup fresh shiitake mushroom, thinly sliced
12 medium raw shrimp, peeled and deveined
1/4 cup dry white wine
1/2 cup heavy cream
1/3 cup lemon juice
4 tablespoons cold butter
salt and white pepper
2 tablespoons plain breadcrumbs
5 1/2 cups spinach, washed and dried
6 ounces cooked angel hair pasta
1 tablespoon pine nuts, toasted

Steps:

  • In a large skillet, melt the 2 tablespoons butter over medium-high heat. Add the garlic and saute for about 30 seconds, just enough to make the garlic sizzle. Add the mushrooms and saute briefly.
  • Add the shrimp and saute for about 30 seconds, until the shrimp is just half cooked.
  • Add the wine and, using a wooden spoon, stir to loosen any brown bits on the bottom of the pan. Let cook for 2 minutes, stirring, to finish cooking the shrimp and reduce the liquid. Remove the shrimp to a warm plate and cover with foil.
  • Add the heavy cream to the pan and let cook for 3 minutes to reduce. Stir in the lemon juice. Remove the pan from the heat and add the 4 tablespoons cold butter, 1 tablespoon at a time, stirring in the next piece after the one before it has just melted.
  • Season with salt and white pepper and stir in the bread crumbs. Return the pan to the heat, add the spinach, and cook, stirring for 1 1/2 minutes or just until the spinach has wilted.
  • Return the shrimp to the pan and stir to coat and heat through.
  • To serve, divide the angel hair pasta between two warmed serving dishes. Arange the shrimp on top, spoon the remaining contents of the pan equally over the shrimp, and sprinkle with the toasted pine nuts.

1 small eggplant (about 6 inches long) (about 12 ounces)
1/4 cup olive oil plus 1 tablespoon, plus more for brushing the bread
Kosher salt and freshly cracked black pepper
1 cup cherry or grape tomatoes (about 15)
2 tablespoons balsamic vinegar
1/2 teaspoon Dijon mustard
1/4 teaspoon granulated sugar
1 small shallot, thinly sliced (about 3 tablespoons)
1 clove garlic, minced
3 tablespoons chopped fresh basil
1 tablespoon chopped fresh oregano
1 teaspoon chopped fresh thyme
One loaf sliced sourdough, country bread or baguette

  • Preheat a grill pan over medium-high heat.
  • Slice the eggplant lengthwise into 1/4-inch-thick slices on a mandoline if you have one. Put the eggplant in a medium bowl and add 1 tablespoon oil and a pinch of salt. Toss to coat.
  • Grill the eggplant in batches until there are grill marks, 2 to 3 minutes. Flip and grill until there are grill marks and the eggplant softens and is no longer white, 2 to 3 minutes. Transfer to a plate and repeat with the remaining eggplant.
  • Grill the tomatoes on each side until they begin to pop, 2 minutes per side. Transfer to a medium bowl. Turn off the heat.
  • To make the vinaigrette, put the vinegar, mustard, sugar, shallots, garlic, pinch salt and 1/4 teaspoon pepper in a small bowl. Slowly drizzle in 1/4 cup oil while whisking continuously until emulsified. Add the basil, oregano and thyme; set aside.
  • Preheat the grill pan over medium-high heat. Brush the bread slices with oil on both sides and sprinkle with salt and pepper. Grill until the bread is crusty and you see grill marks, 2 to 3 minutes per side. Transfer to a plate.
  • Put the artichokes in a large bowl. Chop up the cooled eggplant. Remove the cherry tomato skins if desired; they should come right off. Halve or quarter the tomatoes and add to the bowl. Add the lemon zest and half of the vinaigrette and toss together. Taste and adjust the seasoning as desired.
  • Top each piece of grilled bread with 3 tablespoons of the vegetable mixture and some crumbled feta if desired.

1 tablespoon slivered fresh basil leaves

  • Preheat oven to 400 degrees F (200 degrees C).
