1 (16 ounce) package elbow macaroni
1 (12 ounce) can tuna in water, drained and flaked
6 hard-cooked eggs, chopped
2 large tomatoes, finely chopped
1 large white onion, finely chopped
1 cucumber, finely chopped
3 cups creamy salad dressing (such as Miracle Whip®)
½ cup 2% milk
¼ cup white sugar, or to taste
3 tablespoons prepared yellow mustard
1 ½ tablespoons ground black pepper, or to taste
½ tablespoon salt, or to taste

Steps:

  • Bring a large pot of lightly salted water to a boil. Cook elbow macaroni in the boiling water until cooked through but firm to the bite, 8 minutes; drain. Rinse with cold water to cool completely; drain.
  • Mix macaroni, tuna, eggs, tomatoes, onion, and cucumber in a large mixing bowl.
  • Whisk salad dressing and milk together in a separate bowl until smooth. Beat sugar, mustard, pepper, and salt into the dressing mixture; pour over the macaroni mixture and stir to coat.
  • Cover bowl with plastic wrap and refrigerate at least 2 hours.

3/4 cup uncooked elbow macaroni
2 large tomatoes
1/2 cup diced deli ham
1/4 cup shredded cheddar cheese
2 tablespoons chopped celery
3 tablespoons mayonnaise
3 tablespoons sour cream
1/4 teaspoon onion powder
1/8 teaspoon pepper
Lettuce leaves, optional

Steps:

  • Cook macaroni according to package directions. Meanwhile, cut a thin slice off the top of each tomato. Scoop out pulp, leaving a 1/2-in. shell. Invert tomatoes onto paper towels to drain., Drain macaroni and rinse in cold water. 1/2 pound whole wheat spaghetti or substitute farfalle or macaroni
1 bunch kale (Lacinato Kale if available)* or 1 bunch spinach
3/4 ounces basil
4 small or 2 large garlic cloves
1/2 cup pine nuts, toasted
1/3 cup extra virgin olive oil
2 tablespoons parmesan cheese, grated
1/2 teaspoon kosher salt
2 grinds of pepper (approximately 1/8 teaspoon)
1 small yellow squash, grated
1/4 cup slivered Kalamata olives
4 ounces feta cheese
10 beefsteak tomatoes

Steps:

  • Cook pasta according to the package. Drain and cool slightly. Rinse the kale and remove the thick stems. If using spinach, wash thoroughly and pull off stems. Slice into 2-inch ribbons. Remove the heavy stems from the basil and reserve 10 small leaves for garnish. Roughly chop the garlic cloves and add them to the bowl of a food processor with the kale or spinach, basil, pine nuts, and Parmesan cheese. Pulse until roughly chopped. While the motor is running, pour the oil slowly through the feed tube until the mixture is smooth. Add salt and pepper and pulse twice to combine. Reserve ½ cup of the pesto for the recipe. The remainder can be reserved to use on pasta, sandwiches or as a salad dressing for tomatoes and avocados. Slice off approximately ¼ of an inch from the top of each tomato (stem side). Reserve. Scoop out the tomato guts and reserve for another recipe, like a tomato sauce or our Sweet Potato Vegetable Soup and Strawberry-Tomato Salsa recipes.
