Tips:

  • For the best flavor, use fresh mahi-mahi fillets. If you can't find fresh mahi-mahi, frozen fillets will also work, but thaw them completely before using.
  • Cut the mahi-mahi into 1-inch pieces so that they cook evenly on the skewers.
  • To make the tapenade, use a food processor to finely chop the olives, capers, anchovies, and parsley. You can also add a little lemon zest or juice for extra flavor.
  • If you don't have a food processor, you can chop the tapenade ingredients by hand. Just be sure to chop them very finely so that the tapenade is smooth.
  • Serve the mahi-mahi skewers with the tapenade and couscous. You can also add a side of grilled vegetables or a salad.

Conclusion:

These easy grilled mahi-mahi skewers are perfect for a summer cookout. They're made with fresh mahi-mahi, a delicious and healthy fish that's also very versatile. The tapenade adds a salty, savory flavor to the skewers, and the couscous makes a light and fluffy side dish. This dish is sure to be a hit with your family and friends.
