MANDARIN ORANGE CHICKEN TOSSED SALAD
From Light & Tasty magazine...submitted by R. Heimerl. I love - just love - this salad! I've served it many times for lunch buddies! The dressing is what makes this dish! I hope you enjoy it too! **Time: allow 1-2 hours of time to marinate chicken and then afterwards another 1-2 hours to chill chicken after cooking. I like to cook the chicken the day before so the salad itself is easy to throw together.***

Tips:
- For a sweeter salad, use canned mandarin oranges in syrup. For a tarter salad, use fresh mandarin oranges.
- If you don't have fresh mint, you can substitute dried mint or another herb, such as basil or cilantro.
- To save time, you can use a store-bought citrus vinaigrette dressing. However, it's easy to make your own dressing with fresh orange juice, olive oil, and a touch of honey.
- For a more substantial salad, add grilled chicken, shrimp, or tofu.
