2 Roma (plum) tomatoes, diced
1 mango - peeled, seeded, and diced
½ bunch cilantro, chopped
½ red onion, diced
3 chipotle peppers in adobo sauce, chopped
1 jalapeno pepper, diced
2 tablespoons sour cream
2 tablespoons lime juice
2 cloves garlic, minced
½ teaspoon cayenne pepper
½ teaspoon ground cumin

1/2 c pineapple, crushed, drain and reserve juice
1/2 c medium sweet onion, minced
4 ripe avocados, coarsely mashed
1 - 2 chipotle pepper in adobo sauce, finely minced (more or less to taste)
1/2 tsp salt
2 Tbsp cilantro, fresh chopped
1 medium mango, ripe, seeded, peeled and diced

Steps:

  • 1. Drain crushed pineapple, reservice juice. In a small bowl, combine onion, avocados, chipotle peppers, salt, cilantro and 2 tablespoons of the reserved pineapple juice.
  • 2. Gently mix in mango and crushed pineapple. Serve immediately. Great with chips, fish, pork, or topping for tacos, etc.

  • Choose ripe mangoes: Use ripe mangoes for the best flavor. Unripe mangoes will be sour and lack sweetness.
