Add the wine and cook on high heat, scraping up all the brown bits in the pan, until almost all the liquid evaporates, about 3 minutes. Stir in the tomatoes, parsley, salt, and pepper.   • Make the sauce: Heat the oil in a large saucepan over medium-low heat, then add the salt pork. Sauté until fat has rendered, about 5 minutes. Remove and discard salt pork.   • Heat the oil in a large sauté pan over medium heat. Add the smashed garlic and sauté until lightly browned, 1 to 2 minutes, then discard the garlic. Working in batches and taking care not to crowd the pan, add meatballs and fry until undersides are brown and slightly crisp, 5 to 6 minutes. Turn and brown the other sides, about 5 minutes more. Transfer cooked meatballs to paper towels to drain, then add to the marinara sauce. Mix gently and serve.

1 cup chopped onion

Four 28-ounce cans whole tomatoes with basil, preferably from San Marzano
1/2 cup olive oil
6 tablespoons minced onion
4 cloves garlic, peeled and minced
Coarse salt and freshly ground pepper
12 leaves fresh basil, torn (optional)
Pinch of dried oregano

Steps:

  • Remove tomatoes from can and place in a large bowl, reserving juices. Crush tomatoes using your hands; remove and discard the hard core from stem end, and any skin and tough membrane; set aside.
  • Place oil in a large, nonreactive saucepan over medium-low heat. Add onion, and cook until soft and just beginning to brown, about 3 minutes. Stir in garlic, and cook until softened, about 30 seconds. Stir in tomatoes and reserved juices; season with salt. Increase heat and bring to a boil. Instructions are for a Big Batch of Marinara Sauce utilizing a huge can of Nina San Marzano Tomatoes 106 ounces which you can purchase for less than four dollars at Costco. The price of yearly membership is worth it just to be able to buy these cans of tomatoes. When you open up this can look at how beautifully bright red the tomatoes are. Also, note that there is a nice beautiful tomato sauce not a watered down version like you find in most canned tomatoes. After I tried the San Marzano tomatoes I couldn't go back to regular canned tomatoes. This is a very flavorful simple marinara sauce. I usually make up a batch when I'm making lasagna and then the extra sauce goes into the freezer to use later. Don't rate this recipe negatively if you choose to make it with other types of tomatoes rather than San Marzano. I have received so many complements on my sauce. Try this you won't be sorry. 106 ounces san marzano tomatoes (Nina San Marzano Imported Canned Tomatoes)
8 garlic cloves (finely sliced)
8 garlic cloves (crushed)
20 basil leaves (sliced)
1 cup olive oil
2 teaspoons sea salt (or to taste)

Steps:

  • Open the can of Nina San Marzano tomatoes, being very careful since the large size of the can makes it awkward. The lid is very sharp be careful not to cut yourself. Pour the tomatoes into a large pot. Mash them a few times with your potato masher and set aside.Slice your garlic with a garlic slicer or use a sharp paring knife to cut very thin slices.
  • Now you'll need a fairly large saute pan. Heat about ¼ cup of the olive oil in the pan on medium and then add the sliced garlic. Saute only until golden brown. (Be careful not to burn it, there is nothing worse than burnt garlic. Watch your heat if it's too hot it can burn the garlic almost instantly. If you do burn the garlic you might as well start all over again.) Then add the crushed garlic, splash with some white wine if desired and saute for just a little longer.
  • Remove the saute pan from the heat and pour the garlic mixture into the large pot with the tomatoes. Pour in the remaining olive oil, salt and simmer uncovered for approximately 60 to 90 minutes. When the sauce has reduced to the thickness you like, remove from heat and add the freshly cut basil and stir.
  • There is a common misconception that you should cook the family recipe for pasta sauce "all day". Not this marinara sauce recipe!

10 cloves garlic, finely chopped
10 1-quart canning jars with rings and lids
10 teaspoons salt, divided
1 ¾ cups bottled lemon juice, divided

Steps:

  • Place tomatoes, bay leaves, honey, oregano, 1 tablespoon salt, and black pepper in a large stockpot and cover with water. Stir to combine, cover, and bring to a low boil over medium-high heat. My Sicillian father used to make this sauce at least weekly. Usually we used fresh, ripe plum tomatos but I don't have his green thumb so my sauce uses the canned tomatos. This is a great basic sauce to start with. Can be served as is over pasta or you can add meatballs, sausage etc. My dad used to add 5 Italian sausages, a pork chop, and a neck bone to the sauce and let it simmer for hours. If you add the meat, brown it and add it to the sauce as it simmers.

10 medium garlic cloves

  • Let sauce simmer for about 30 minutes to reduce and intensify flavors stirring occassionally.
  • Add basil and parsley and stir well.
  • Allow sauce to simmer at least another two hours (can simmer all day if desired)stirring occassionally.
  • After two hours taste sauce, if acidic or if you want more sweetness add 1/2 tsp baking powder (or sugar) to cut acidity. Only do this if necessary.
  • Pull out both bay leaves before serving/storing.
  • Sauce can be served over pasta now or stored in freezer or refridgerator. If adding in meat add at the begining when adding tomatos.

I had a lot of tomatoes this year and after trying other marinara sauces, I came up with this one. We like a little spicy. You can also use canned tomatoes for this recipe. Try this sauce with Recipe #23713--it's wonderful.

5 1/2 lbs tomatoes
12 ounces tomato paste
3 teaspoons garlic, minced
2/3 cup finely chopped onion
4 tablespoons olive oil
4 tablespoons parsley flakes
2 teaspoons oregano
3 teaspoons salt
1/2 teaspoon black pepper
1/2 teaspoon red pepper flakes
3 tablespoons italian seasoning
3 tablespoons sugar
1/2 cup chicken broth
1/2 cup red wine
2 teaspoons dried basil

Steps:

  • Peel tomatoes and process smooth.
  • Sauté garlic in large pot in olive oil.
  • Add all other ingredients and simmer for 1 1/2 hours. Stir occasionally.
  • This recipe is approx yield of 80 oz.
  • If canning use canning salt otherwise this freezes nicely. I store in 20 oz containers.

Steps:

  • In 6-quart Dutch oven, heat 1 inch oil to 360°F.
  • In shallow bowl, slightly beat eggs. In another shallow bowl, mix bread crumbs, cheese, garlic powder and salt. Dip thawed, uncooked ravioli in eggs, then coat with crumb mixture, shaking off excess.
  • Fry ravioli, 10 at a time, in hot oil 20 to 30 seconds or until golden. Drain on paper towels. Serve with marinara sauce.

4 tablespoons extra-virgin olive oil
2 large yellow onions, peeled, halved and diced
10 cloves garlic, peeled, halved and cut into thin slices
2 to 3 teaspoons red pepper flakes
2 teaspoons granulated sugar
Kosher salt
3 medium carrots, peeled and grated
Two 28-ounce cans whole peeled tomatoes
4 cups water, divided, plus more as needed
1 cup basil leaves, washed
Freshly grated Parmesan

Steps:

  • Heat the olive oil in a large skillet over medium heat. Add the onions, the garlic, red pepper flakes, and sugar and season with salt, to taste. Stir in the carrots and reseason with salt. Cook for about 2 minutes, and then add canned tomatoes. Use a wooden spoon to break up some of the whole tomatoes and cook over medium heat, stirring from time to time, about 20 minutes. If at any point the veggies or the sauce is getting dry, add some water. Continue cooking another 10 minutes, and then taste for seasoning. The tomatoes should be fairly broken down and the flavors coming together. Cook an additional 10 minutes. The sauce cooks about as long as it takes to make the meatballs from start to finish, about 45 minutes. Stir in the basil leaves and season with Parmesan.

Extra-virgin olive oil
1 pound refrigerated pizza dough
2 tablespoons minced garlic (about 2 large cloves)
2 tablespoons grated Parmesan
2 tablespoons chopped fresh parsley
All-purpose flour, for dusting
6 ounces sliced pepperoni
2 1/2 to 3 cups shredded low-moisture mozzarella (about 12 ounces)
Marinara Sauce, for serving, recipe follows
1 tablespoon extra-virgin olive oil
1/4 cup finely diced yellow onion (about 1/2 small onion)
1 teaspoon kosher salt
2 teaspoons minced garlic (about 2 large cloves)
2 tablespoons tomato paste
1/2 teaspoon dried oregano
Pinch crushed red pepper
One 26-ounce box chopped tomatoes, such as Pomi

Steps:

  • Preheat the oven to 400 degrees F. Line a baking sheet with foil and lightly grease the foil with olive oil. Remove the pizza dough from the refrigerator and let sit at room temperature for 30 minutes.
  • In a small bowl combine the garlic, Parmesan, parsley and 1/4 cup olive oil. Set aside.
  • Lightly dust a work surface with flour and roll out the pizza dough into a 12-by-14-inch rectangle. Arrange the dough with the 14-inch side parallel to you. With a ruler, mark every 4 inches along the 12-inch side. Cut the dough straight across at the marks to make three 4-inch-wide strips. Brush top of the strips with 1 tablespoon olive oil. Shingle the pepperoni slices over the dough strips. Sprinkle 3/4 to 1 cup of the mozzarella in a line down the center of each strip.
  • Roll up each dough strip into a long log, as you would for cinnamon rolls. It is easiest to begin by folding the bottom of the dough up over the cheese; if there is any cheese sticking out, stuff it back into the roll. Continue rolling the dough over itself until it forms a log with dough on the outside and all of the pepperoni and mozzarella on the inside. Pinch the seams together, then pinch the sides together. Lightly brush the logs all over with olive oil and transfer them, seam-side down, to the prepared baking sheet.
  • Bake until golden brown, 12 minutes. Brush the tops of the logs generously with the garlic mixture and return to the oven for another 3 minutes, until the garlic is very fragrant but not yet browned. Let cool for 10 minutes.
  • Transfer the pepperoni rolls to a cutting board and slice into 1 1/2-inch pieces. Serve immediately with marinara sauce.
  • Heat the olive oil over medium heat in a medium saucepot. Add the onions and salt and saute until softened, 2 minutes. Add the garlic and cook an additional 30 seconds until fragrant but not browned. Stir in the tomato paste, oregano and crushed red pepper; cook 30 seconds to toast the tomato paste and spices. Stir in the chopped tomatoes. Bring the sauce to a boil, reduce the heat to medium low and simmer for 10 minutes, stirring often. Remove from the heat and adjust the seasoning with salt to taste. Keep warm until ready to serve, or cool completely and refrigerate in an airtight container.

All it takes is a few basic ingredients you probably already have on hand and a little patience. Once you try this recipe, I guarantee you're going to want to make it over and over again! I chose to make them mini because I always feel badly double-dipping my mozz sticks in the group marinara, and these mini ones are perfect for just one dunk. Enjoy the mozzarella sticks dunked into marinara sauce or on a salad. They can also be assembled in advance and stored in the freezer, ready to fry anytime you want an appetizer or snack.

1 1/2 cups panko
3 large eggs
1 cup all-purpose flour
Kosher salt
1 cup grated Parmesan, plus more for serving
1 teaspoon dried basil (optional)
1 teaspoon dried oregano (optional)
1 teaspoon dried parsley (optional)
One 12-ounce block whole milk mozzarella cheese, cut into twenty-four 2-inch sticks or Twelve 1-ounce mozzarella string cheese sticks, cut into 2-inch pieces
2 tablespoons extra-virgin olive oil
1 tablespoon fennel seeds
1 teaspoon crushed red pepper flakes
2 cloves garlic, thinly sliced
One 15-ounce can tomato sauce
Neutral oil, such as canola, grapeseed or vegetable
2 tablespoons chopped fresh flat-leaf parsley leaves

Steps:

  • Line a rimmed baking sheet with parchment paper. Make room for the baking sheet in your freezer.
  • Blitz the panko in a food processor until it has the texture of coarse sand. Make a dredging station by preparing 3 large resealable plastic bags. In the first bag, whisk together the eggs with 3 tablespoons water. In the second, combine the flour and 1 tablespoon salt. In the third, combine the panko and Parmesan, as well as the dried basil, dried oregano and/or dried parsley if using.
  • Working in an assembly line, add the mozzarella to the egg mixture, tossing to coat. Allow any excess egg to drip off, then transfer the mozzarella to the flour mixture and shake to coat. Transfer the mozzarella back to the egg mixture, tossing to coat. Transfer the mozzarella to the panko mixture and shake to coat. Transfer the mozzarella back to the egg mixture and then the panko mixture one more time, then place on the parchment-lined baking sheet. Place the baking sheet with the mozzarella sticks in the freezer for 20 to 30 minutes (see Cook's Note).
  • Meanwhile, make the marinara sauce. Heat the olive oil in a medium saucepan over medium heat. Add the fennel seeds and red pepper flakes and cook, stirring occasionally, until fragrant, 1 to 2 minutes. Add the garlic and cook, stirring occasionally, 1 minute more. Stir in the tomato sauce and cook, stirring occasionally, until thickened, 10 to 15 minutes. Season with salt to taste and keep warm.
  • When ready to fry the mini mozzarella sticks, add a 1/2 inch of neutral oil to a large skillet or Dutch oven and heat over medium heat until shimmering. Set a wire rack inside a rimmed baking sheet or line with paper towels.
  • Fry the mozzarella sticks in batches until golden, 1 to 2 minutes per side. Transfer to the wire rack and immediately season with salt.
  • Pour the marinara sauce into a ramekin, then place the mozzarella sticks on a serving platter, top with some Parmesan and the chopped parsley and enjoy!

Tips:
