Prepare Steak
1.5 lb Flat Iron Steak or Sirloin Steak, Cut into bite-sized pieces
1 cup Your Favorite Marinade, or Italian Dressing
2 Tbsp Extra Virgin Olive Oil
Prepare Veggies
4 cups Sweet Potatoes, Diced
1 red or green Bell Pepper, Diced
2 cups Shredded Kale, Optional
2 Tbsp Extra Virgin Olive Oil
Salt & Pepper, To taste

Steps:

  • Marinate the steak bites for at least 30 minutes or up to a few days ahead of time. The longer, the better, but even 30 minutes makes such a difference. You can even just let the meat swim happily in the marinade while you cut up & cook your veggies.
  • Preheat the oven to 425
  • On a baking sheet, toss your veggies (excluding kale, if using) with olive oil and salt and pepper.
  • Bake for 20 minutes, toss, then bake for 10 minutes more, remove from oven.
  • Once the veggies have baked, add olive oil to a large cast iron pan, or skillet of choice over med/high heat until the olive oil starts to ripple.
  • While this is happening, discard any leftover marinade and then place your steak bites in a single layer in the pan, and saute for about 5 minutes, browning all sides of the meat. Likely no more than 5 minutes is needed.
  • Add the roasted veggies to the skillet and stir everything together and sautéing about 2 more minutes.
  • Remove from heat and then add the chopped kale and stir.

Sweet Potato Steak with Tenderloin

7 large sweet potatoes
1/2 cup grapeseed oil
1 (5-ounce) filet mignon, cut into 1/8-inch thick julienne
Salt and pepper, to taste
1 tablespoon Wondra flour
1 Thai chili, chopped
2 tablespoons gingerroot
1/4 cup reduced chicken stock
Fresh pea shoots or watercress, for garnish

Steps:

  • First make your sweet potato sauce. Using a vegetable juicer, juice 6 sweet potatoes, cut into small pieces, skin left on. Once you have enough juice, about 3 1/2 cups, let it stand for about 4 hours. This will allow much of the potato starch in the juice to settle. Trim 1 large sweet potato and cut it into hockey puck size sections. Trim sides. Rub the potato steaks with a bit of the grapeseed oil and season with salt and pepper. Place steaks on a grill pan and mark. Take your sliced filet mignon, season with salt and pepper, and sprinkle the steak fries with the Wondra flour. Transfer to a hot saute pan with tablespoon grapeseed oil. Saute steak fries until well browned and transfer to a plate lined with paper towels, and let rest for 2 to 3 minutes. Next transfer the potato steaks to a foil lined baking sheet. Bake potato steaks until tender in a preheated 350 degree oven. While the potatoes are baking, strain the sweet potato juice into a saucepan over medium heat. Reduce the sauce until you have only 3/4 cup left and the juice has naturally thickened. Stir in the chopped Thai chili, the ginger and strain the sauce. Add the chicken stock and set aside. Plate the potato steaks with the steak fries and sweet potatoes sauce. Garnish with sprigs of fresh pea shoots or watercress.

1 medium garlic clove, minced
1/4 cup balsamic vinegar
2 tablespoons soy sauce
2 tablespoons olive oil

2 (8 ounce) beef shell steaks
1 tablespoon unsalted butter
2 teaspoons olive oil
2 medium sweet potatoes, pared, sliced 1/4-inch thick
1/4 teaspoon salt

  • Whisk first 6 ingredients together in mixing bowl. Place steaks in shallow glass baking dish and pour marinade over top. Turn several times to coat completely. Refrigerate covered at least 30 minutes.

I decided to try preparing my sweet potatoes in various ways and this is one that I came up with. Very simple and can be modified to suit your taste. The recipe is enough for two generous servings for adults. The potatoes will not be as crispy as regular potatoes because of the texture difference so be sure to not overcook.

2 medium sweet potatoes
1/2 cup white onion, diced
2 tablespoons olive oil
2 garlic cloves, pressed
1 teaspoon salt (more or less to taste)

Steps:

  • Dice sweet potatoes no thicker than 1/4 inch thick.
  • Place pan on medium heat to begin warming. While waiting dice onion and prepare garlic.

2 strip steaks (each about 1 inch thick), room temperature
Kosher salt and freshly ground pepper
1 teaspoon unsalted butter
Simple Steak Sauce, optional

Steps:

  • Heat a large heavy-bottomed skillet (preferably cast iron) over high 5 minutes. Generously season steaks with salt and pepper. Add 1/2 teaspoon butter to pan, then immediately top with one steak. ⅓ cup fresh lemon juice
¼ cup Worcestershire sauce

¼ teaspoon hot pepper sauce
1 teaspoon dried minced garlic
