  • 2. Add vegetables to a bowl, add 2 Tbsp. cooking oil add spices. Toss to coat.
  • 3. Drizzle the rest of the cooking oil on a baking pan. Add vegetables. Place in oven to roast. Turn over vegetables using tongs after 10 to 15 minutes. Roast for 20 to 25 minutes.

Tips:

  • Choose the right potatoes: For the best results, use small, waxy potatoes such as Yukon Gold or Red Bliss. These potatoes hold their shape well and roast evenly.
  • Cut the potatoes evenly: Cut the potatoes into uniform pieces so that they cook evenly. If the pieces are too large, they will take longer to cook through and may burn on the outside before the inside is done.
  • Toss the potatoes with olive oil and seasonings: Before roasting, toss the potatoes with olive oil, salt, pepper, and any other desired seasonings. This will help them to brown and develop flavor.
  • Roast the potatoes at a high temperature: Roast the potatoes at a high temperature (425°F or higher) so that they get crispy on the outside and tender on the inside. If you roast them at a lower temperature, they will take longer to cook and may not get as crispy.
  • Roast the potatoes until they are tender: Cook the potatoes until they are tender when pierced with a fork. The cooking time will vary depending on the size of the potatoes and how hot your oven is.
  • Serve the potatoes immediately: Roasted potatoes are best served immediately after they are cooked. They can be served as a side dish, main course, or snack.
