2 marlin steaks
1 tsp minced garlic
3 Tbsp butter (melted)
1 Tbsp soy sauce
3 tsp honey

Steps:

  • Combine the minced garlic, melted butter, soy sauce and honey in a jug Remove fish from packaging and pat dry Place fish in a marinading dish and pour marinade over the steaks Cover the dish with a lid or cling film and allow to sit at room temperature for 30 minutes Turn steaks over and allow to marinade for a further 30 minutes On a medium to high heat, pan fry the steaks for 3 minutes a side Scoop any extra marinade over the fish while it's cooking Remove from heat and allow to rest in a separate dish for 1 minute Serve immediately with your choice of sides

½ cup butter, divided
2 teaspoons minced garlic, divided
3 tomatoes, cubed
4 ounces fresh basil, chopped
2 tablespoons fresh lime juice
2 (6 ounce) swordfish steaks

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Place 1/4 cup butter and 1 teaspoon garlic in a medium pot over medium-low heat. When the butter is melted, stir in the tomatoes, basil, and lime juice. Just before the mixture comes to a boil, reduce the heat to low.

louisiana brand cajun seasoning

1 large carrot, julienned
