3 large egg yolks
2 tablespoons freshly squeezed lemon juice
1/2 teaspoon kosher salt
1 stick unsalted butter

Steps:

  • Place egg yolks, lemon juice, and salt in a blender; blend until combined. Melt butter in a saucepan or in microwave. With blender running, slowly pour butter through opening in lid in a thin stream until sauce is thick, about 1 minute.

3 large egg yolks, room temperature
4 1/2 teaspoons fresh lemon juice
1 1/2 sticks (12 tablespoons) unsalted butter, melted and cooled
Coarse salt

Steps:

  • Whisk yolks in a large heatproof glass bowl until they begin to turn pale, about 1 minute. Whisk in 4 1/2 teaspoons warm water. Set bowl over a pan of barely simmering water; heat yolk mixture, whisking vigorously, until thickened, 2 to 3 minutes (do not overcook). Remove bowl from pan. Whisk in lemon juice.

3 large egg yolks
1 teaspoon fresh lemon juice
1/2 teaspoon salt
Pinch of cayenne pepper
Pinch of freshly ground black pepper

  • Melt butter in a saucepan over low heat and let cool slightly.
