MARY'S SAVORY MARINARA SAUCE

Mary's Savory Marinara Sauce image

This is my mom's delicious marinara sauce recipe that she kindly provided to me. I have fond memories of her making this sauce often and filling the entire house with its wonderful aroma. It has a savory tomato-y taste, a nice hint of basil, and goes well with all types of pasta (including lasagna). I also like to use it for homemade meatball heroes. I hope that you all will enjoy it as much as we do!

3 cups hot water

  • If you'd like, you can add meatballs and/or sweet Italian sausage to the sauce at this point.
  • Adjust the flame to a low heat and let the sauce cook for about 2 1/2 hours, stirring occasionally.
  • After the 2 1/2 hours, add the sugar and cook for another 45 minutes.

Time 40m

Yield Makes 6 cups

Number Of Ingredients 8

3 tablespoons extra-virgin olive oil
1 medium onion, chopped
4 garlic cloves, thinly sliced
2 cans (28 ounces each) peeled whole tomatoes, pureed in a food processor
1/2 teaspoon crushed red-pepper flakes
Coarse salt and freshly ground pepper
1/4 cup fresh basil, leaves torn
1 tablespoon chopped fresh oregano

Steps:

  • Heat oil in a large heavy pot over mediumheat. Cook onion and garlic until softand translucent, about 8 minutes. Addtomatoes, red-pepper flakes, 1 teaspoonsalt, and some pepper. Simmer, covered, until thick, 25 minutes. Stir in herbs.

Tips:

  • Use fresh ingredients: The fresher the ingredients, the better your marinara sauce will taste. Use ripe tomatoes, fresh herbs, and high-quality olive oil.
  • Don't overcrowd the pan: When cooking the vegetables, don't overcrowd the pan. This will prevent them from cooking evenly and will make the sauce watery.
  • Simmer the sauce for at least 30 minutes: The longer you simmer the sauce, the more time the flavors will have to meld together. Simmer the sauce for at least 30 minutes, or up to 2 hours.
  • Season the sauce to taste: Season the sauce with salt, pepper, and other herbs and spices to taste. You may also want to add a pinch of sugar to balance out the acidity of the tomatoes.
  • Use the sauce immediately or store it for later: The sauce can be used immediately or stored in an airtight container in the refrigerator for up to 5 days. You can also freeze the sauce for up to 3 months.
