MASHED CANDIED YAMS

Mashed Candied Yams image

I had these at an appreciation dinner at Treasure Island Casino in Minnesota and later asked the banquet manager to give me the recipe. These were delicious and very easy to make. They taste like candy and melt in your mouth . If you like you can thicken them up with instant mashed potatos, this gives them a bit smoother texture and enables you to use a pastry gun to plate the yams for a fancier presentaion.

After much trial and error, and mashing up a few of my favorite recipes, I created these. I've been told by friends and family that don't even like yams that I must make these every thanksgiving.

Tips:

  • Choose the right yams: Look for firm, plump yams with smooth skin and no blemishes. Avoid any yams that are soft or have bruises or cuts.
  • Pierce the yams before baking: This will help them cook more evenly and prevent them from bursting.
  • Bake the yams until they are tender: You can check this by piercing them with a fork. The fork should slide in easily when the yams are done.
  • Let the yams cool slightly before mashing them: This will help prevent them from becoming too sticky.
  • Use a potato masher or ricer to mash the yams: This will give them a smooth and creamy texture.
  • Add your desired seasonings and mix well: Some popular seasonings for candied yams include brown sugar, butter, cinnamon, nutmeg, and vanilla extract.
  • Serve the candied yams warm: They can be served as a side dish or dessert.

Conclusion:

Mashed candied yams are a delicious and versatile dish that can be enjoyed by people of all ages. They are a great source of vitamins and minerals, and they can be made with a variety of different ingredients to suit your taste. Whether you are looking for a sweet or savory dish, mashed candied yams are sure to please. So next time you are looking for a new side dish or dessert, give this recipe a try.
